You've no idea of what to make for dinner? Here's an easy Chicken Sambal recipe for you to try. Chicken Sambal is one of my all time favourite dishes and I can never get enough of it. I got this recipe from 'Mdm. Vasandra Davi Ramalingam' (I call her Auntie Vasandra) who's my Malaysian Indian cuisine mentor.  

Note : Here are some tips to make the dish less spicy; -  Soak the dried Chillies (about 40-50 grams of dried Chillies) in hot water with one teaspoon of tamarind paste or vinegar and a pinch of salt till soften.  Place the dried chillies in a strainer and then remove the seeds and membrane of dried chillies with a pair of scissors. Rinse under running water and drain well.

Ingredients for Chicken SambalπŸ‘‡;
Ingredients A
(Bahan-Bahan A)
1.  Whole Chicken, chopped into 12 or 14 pcs - 1.3kg /
(Ayam - 1 ekor, dipotong 12 atau 14 - 1.3 kg)

Ingredients B
(Bahan - Bahan B)
1. Onion - 4 pcs, thinly sliced /
(Bawang besar - 4 biji, hiris nipis)
2. Tomato - 80grams, chopped * I used cherry tomatoes /
(Tomato - 80gram), dihiris * saya guna Tomato Cherry)
3. Lemongrass - 3 stalks, bruised /
(Serai - 3 batang, diketuk)
4. Oil - 4 tbsp, add more oil if needed/
(Minyak masak - 4 tbsp, tambah jika perlu)
5. Curry Leaves - 1 Sprig, leaves only, discard the stem - Optional/
(Daun Kari - 1 tangkai, ambil daun sahaja, buang tangkai - Optional)

Ingredients C -finely blended
(Bahan - Bahan C - kisar halus)
1. Dried Chilli - 30 pcs(40grams) or 6 tbsp of Chilli powder/
(Chilli kering - 30 biji(40gram) atau 6 sdm serbuk cili)
2. Garlic - 6 cloves, sliced /
( Bawang Putih - 6 ulas)
3. Shallot(s) - 6 pcs, sliced /
(Bawang merah - 6 biji)
4. Fresh ginger - 2 cm, sliced /
(Halia segar - 2 cm)

**Place Ingredients C in a blender and blend ingredients until fine.
(Masukkan bahan - Bahan C dalam satu blender dan kisar halus).

Ingredients D
(Bahan - Bahan D)
1. Salt - to taste
(Garam - ikut citarasa)
2. Chicken stock - 1 cube/
(Stok Ayam - 1 kube)
3. Brown sugar - to taste
(Gula perang - ikut citarasa)

Method
(Cara membuat πŸ‘‡πŸ‘‡πŸ‘‡)
1. Heat 4 tbsp(add oil if needed) of oil in a wok.
**(Panaskan 4 sdm(tambah minyak jika perlu) minyak dalam kuali).

2. Stir fry sliced onion, curry leaves and lemongrass till fragrant.
**(Tumis bawang besar, daun Kari dan serai hingga wangi).

3. Add chopped tomatoes and cook for about 5 minutes over low heat or simmer until tomatoes and onions are beginning to break up.
**(Masukkan tomato dan masak dengan api kecil sehingga tomato dan bawang mula kelihatan hancur).

4. Then add blended ingredients(C) and stir over low heat until the oil rises to the top and red color oil is visible.
**(Masukkan bahan kisar(C), gaul dengan api kecil hingga pecah Minyak).

5. When red color oil is visible, add in chicken pieces and mix well. Simmer over low - medium heat until the chicken excretes liquid.
**(Masukkan Ayam dan gaul rata. Masak dengan api kecil dan sederhana hingga ayam mengeluarkan cecair).

6. Add water barely to cover the chicken followed by Chicken cube, salt and brown sugar. Mix well. 
**(Masukkan air hingga cukup menutupi ayam sahaja. Tambah kube Ayam, garam dan gula perang. Gaul rata).

7. Simmer over low to medium heat and stir occasionally until the gravy thickens. 
**(Masak dengan api kecil dan sederhana dan gaul sekali sekala hingga kuah pekat).

8. Once the gravy has thickened, turn off the heat. Dish out and ready to be served!!l.
**(Bila kuah dah pekat, padamkan api dan sedia untuk dihidang).
