Ingredients for Grilled Mackerel👇
Ingredients A.
(Bahan - Bahan A)
1). 2 large Mackerel Fish - about 600grams each (total - 1.2kg) /
-(2 ekor ikan Mackerel saiz besar - lebih kurang 600gram seekor (total - 1.2kg)
2). Anchovy Stock powder - 2 tsp /
-(Serbuk Perasa ikan bilis - 2 sdt)
3). Turmeric powder - 2 tsp /
-(Serbuk Kunyit - 2 sdt)
4). Salt - 2 tsp or to taste /
-(Garam - 2 sdt atau ikut selera)
5). MSG - to taste*optional /
-(MSG - ikut selera*optional)
6). Chilli powder - 0.5@half tsp or adjust to your preference /
-(Serbuk Cili - 0.5@setengah sdt atau ikut selera masing-masing)
Method for A
(Cara membuat untuk A)
1). Line the roasting pan with aluminum foil for fast and easy clean up. Grease the lined roasting pan with few drops of oil.
-(Lapikkan dulang pembakar dengan aluminum foil supaya senang dibersih. Sapu minyak atas dulang yang telah dilapik tadi).

Method for A

2). Rinse Mackerel Fish well and pat dry with paper towels.
-(Bersihkan ikan dan keringkan dengan kertas tisu dapur)
3). Make a horizontal cut along the bones of the fish starting from the stomach to the tail.

-(Potong ikan secara mendatar sepanjang tulang belakang ikan bermula dari perut hingga ke ekor)
4). Rub fish with the remaining of ingredients A (salt, anchovy stock powder, MSG, Chili Powder and turmeric Powder).
-(Gaulkan ikan dengan baki Bahan-Bahan A(garam, serbuk perasa ikan bilis, MSG, serbuk Cili dan serbuk kunyit).
5). Transfer the fish into the lined roasting pan. Press the fish belly down with your hand so the fish lays down with the fins sticking up. Set aside for 15 minutes.

-(Susun ikan di atas dulang pembakar yang telah dilapik dengan aluminum foil tadi dan ketepikan selama 15 minit).

1.Garlic - 6 cloves, chopped /
-( Bawang Putih - 6 ulas, dicincang )
2). Red Chilies - 2 pieces, shredded * add more if needed/
-(Cili merah - 2 biji, hiris halus * tambah jika perlu)
3.Butter - 1 tbsp /
-(Mentega@Butter - 1 sdm )
4). Vegetable Oil - 3 tbsp /
-(Minyak sayur - 3 sdm )

(Panaskan 1 Sdm mentega dan 3 Sdm minyak dalam kuali. Masukkan bawang putih dan cili. Kacau rata hingga wangi).

2). Remove the grilled fish from the oven and pour the Butter Garlic Sauce(B & C) evenly over the fish. Return the grilled fish to the oven and continue to cook it for 1 or 2 minutes at 220°C until the flavour is infused.
-(Keluarkan ikan dari dalam oven, tuangkan sos butter garlic(B & C)di atas ikan. Masuk balik ikan bakar ke dalam oven dan bakar lagi selama 1 atau 2 minit dengan suhu 220°C hingga sos meresap).
3). Once done, garnish the fish with some dried parsley leaves if you like. Serve hot.
-(Bila sudah siap, hiaskan ikan dengan sedikit daun parsley kering jika kamu suka. Hidang semasa panas).

Chili Dipping Sauce

Chili Dipping Sauce Ingredients 👇
(Bahan-Bahan untuk Sambal Cili)
1). Fresh Chilies - 60grams, cut into small pieces /
-(Cili segar - 60gram, dipotong kecil)
2). Garlic - 40grams, sliced /
-(Bawang putih - 40gram, dihiris)
3). Fresh Ginger - 20grams, sliced /
-(Halia Segar - 20gram, dihiris)
4). Bird's eye Chilies - 6 pieces*optional /
-(Cili Padi - 6 biji*optional)
5). Salt - 2 tsp or to taste /
-(Garam - 2 sdt atau ikut citarasa)
6). Brown or white sugar - 5 tsp or to taste /
-(Gula Perang atau Putih - 5 sdt atau ikut citarasa)
7). MSG - to taste*optional /
-(MSG - ikut citarasa*optional)
8). Calamansi lime extract - 3 tbsp*add more if you like /
-(Perahan limau kasturi - 3 Sdm*tambah jika suka)

Method for Chilli Dipping Sauce
(Cara membuat Sambal Cili)
1). Combine Chilies, garlic, ginger and bird's eye Chillies in a blender and blend coarsely.
(Masukkan cili, bawang putih, halia dan cili padi dalam blender dan kisar Kasar)
2). Dish out and add salt, sugar, MSG and calamansi lime extract. Mix well and allow the sugar and salt to fully dissolve. It's ready to be served.
-(Masukkan bahan-bahan yang telah dikisar tadi dalam mangkuk dan tambahkan garam, Gula, MSG dan perahan limau kasturi. Gaul rata hingga gula dan garam cair. Sedia untuk dihidang).
Delicious.... We always have lemon butter grilled cod with beer in Holland. Famous dish in our pub to eat with beer.... Love from Holland and God bless you Miss Liban...
