I'm sharing with you what I made for lunch at home today. I made grilled Chicken + Potatoes, seasoned with Oyster sauce and Malaysian Palm Sugar. I used bone-in Chicken thighs with skin-on.  This dish is so easy and simple to make and came out moist and tender. For your info, I used grilling and broiling methods for this recipe. The baked chicken is crispy on the outside and juicy on the inside and  you can pair it with anything you want.  Here's the recipe.

Ingredients A
(Bahan - Bahan A)
1). Chicken thigh - 3 pieces@900grams, cleaned and drained /score each chicken thighs few times before marinating it.
*(Paha ayam - 3 keping@ 900gram, dibersihkan dan kelarkan ayam sebelum diperap).

Ingredient B
(Bahan - Bahan B)
1). Oyster sauce - 6 tbsp /
*(Sos tiram - 6 sdm)
2). Malaysian Palm Sugar or brown sugar - 3 tbsp /
*(Gula Melaka atau gula perang - 3 tbsp)
3). Olive oil or vegetable oil - 3 tbsp /
*(Minyak zaitun atau minyak sayuran - 3 sdm)
4). Chili powder - 2 tbsp /
*(Serbuk cili - 2 sdm)
5). Chicken seasoning powder - 3 tsp /
*(Serbuk perasa ayam - 3 sdt)
6). Black pepper powder - 3 tsp /
*(Serbuk lada hitam - 3 sdt)
7). Salt - to taste /
*(Garam - Ikut citarasa)
8). Garlic powder - 3 tsp /
*(Serbuk bawang putih - 3 tsp /

Ingredients C
(Bahan - Bahan C)
1. Potato - 300 grams, chopped into bite-sized chunks and steamed for 10 minutes /
*(Kentang - 300 gram, dipotong ikut selera dan kukus selama 10 minit)
2). Chicken seasoning powder - 3 tsp /
*(Serbuk perasa ayam - 3 sdt)
3). Salt - to taste /
*(Garam - ikut citarasa)
4). Olive oil or vegetable oil- 3 tbsp /
*(Minyak Zaitun atau minyak sayuran- 3 sdm)
5). Chili powder - 2 tsp /
*(Serbuk cili - 2 sdt)
6). Onion - 2 pcs, sliced /
*(Bawang Besar - 2 biji, dihiris)
7). Capsicum (red and green or your preferred color ) - 1 cup /
*(Lada Bengala - 1 cawan)
8). Carrot - 1 pc, chopped into bite-size /
*(Lobak merah - 1 biji, dipotong)

Method
(Cara membuat)
1). Place Chicken(ingredient A) and ingredients B in a bowl and mix well. Leave the chicken in the refrigerator to marinate for 4 - 6 hours.
*(Satukan ayam(bahan A) dan bahan B. Gaul rata dan perap selama 4-6 jam dalam peti sejuk).

2). Remove the marinated chicken from the refrigerator and let it sit in room temperature for around 30 minutes. Line the roasting pan with aluminum foil for fast and easy clean up.

*(Keluarkan ayam dari peti sejuk dan biarkan berada dalam suhu bilik selama 30 minit. Lapikkan loyang dengan aluminum foil). 
 
3). In a separate bowl, mix the potatoes and the rest of ingredients C together and set aside for 15 minutes. 
*(Masukkan bahan C dalam sebuah mangkuk, gaul rata dan perap selama 15 minit).

4). Then transfer ingredients C and the marinated chicken(A & B) into the roasting pan.
*(Masukkan bahan C dan juga ayam yang telah diperap (Bahan A & B) dalam loyang yang telah dilapik dengan aluminum foil.

5). Preheat oven to 250°C. When the oven is up to the temperature,  grill the marinated chicken and potatoes at 250°C for 15 minutes. ๐Ÿ‘‰Note : I used grilling and broiling methods.
*(Panaskan oven dengan suhu 250°C dan pangang ayam dan kentang pada suhu 250°C selama 15 minit. ๐Ÿ‘‰Nota:Saya guna oven dengan alat pemanggang bawah dan atas). 

6). Then reduce the oven temperature to 190°C and continue to roast the chicken for 20 minutes.
*(Selepas 15 minit, kurangkan suhu oven ke 190°C dan teruskan pangang ayam selama 20 minit).

7). After 20 minutes, remove the chicken from the oven and  glaze it with 2 tbsp of olive oil/vegetable oil. 
 *(Selepas 20 minit, keluarkan ayam dari dalam oven, sadur/glaze dengan 2 sdm minyak zaitun/minyak sayuran.

8). Allow the roasted chicken to rest for at least 20 minutes before serving in order for the moisture from the chicken to distribute evenly and seal itself in.
*(Rehatkan ayam bakar selama 20 minit di luar oven sebelum hidang supaya ayam kekal lembab di dalam).
