I was craving for spicy noodles so I decided to cook "Mamak Fried Noodles" for today's lunch. It was so scrumptious and full of flavour. If you're not from Malaysia, you might've never heard of the word "Mamak",.....well, "Mamak" refers to the Malaysian Tamil people, of Muslim origin living in Malaysia. Here's my version of Mamak Fried Noodles that I created to suit my own taste. You can even add bird's eye Chilli in your fried noodles if you want it to be extra hot.

Ingredients for Mamak Fried Noodles;πŸ‘‡
Ingredients A
(Bahan - Bahan A)
1). Yellow Noodles - 500 grams /
*(Mee Kuning - 500 gram)
2). Eggs - 3 pieces, - beaten. Heat enough oil in a pan, add the beaten egg and scramble it, removed and set aside.
*(Telur - 3 biji, dipukul. Panaskan minyak secukupnya dan masukkan telur - kacau hingga hancur. Ketepikan)

Ingredients B - Finely Blended
(Bahan-bahan B - Blend Halus)
1. Chilli Powder - 3 tbsp /
*(Serbuk Cili - 3 Sdm)
2). Shallots - 4 pieces, sliced /
*(Bawang merah - 4 biji, dihiris)
3). Garlic - 4 cloves, sliced /
*(Bawang putih - 4 ulas)
4). Anchovies - 2 tbsp /
*(Ikan bilis - 2 sdm)
5). Water - 50 ml - add more water if needed/
*(Air - 50 ml - tambah air jika perlu)
6). Bird'e eye Chilli - 6 pieces*Optional /
*(Cili Padi - 6 biji*Optional)
-Combine Ingredients B in a blender and blend till smooth.
*(Masukkan semua bahan-bahan B dalam blender dan kisar halus).

Ingredients C
(Bahan-bahan C)
1). Medium size prawns - 12 pieces, deveined, rinsed and drained/
*(Udang saiz sederhana - 12 ekor, dibersihkan, tos)
2). Chicken Breast - 100 grams, thinly sliced /
*(Dada Ayam - 100 gram, dihiris nipis)
3). Fish ball/Fish Cake - 80 grams, sliced /
*(Bebola Ikan/Fish Cake - 80 gram, dihiris)

Ingredients D
( Bahan-bahan D)
1). Light soya sauce - 1 tbsp /
*(Kicap soya cair - 1 Sdm)
2). Dark soya sauce - 1 tbsp /
*(Kicap soya pekat - 1 Sdm)
3). Sweet Chilli Sauce - 2 tbsp /
*(Sos cili manis - 2 Sdm)
4). Oyster sauce - 2 tbsp /
*(Sos Tiram - 2 Sdm)
-Combine Ingredients D in a bowl and mix well. Set aside.
*(Masukkan semua bahan-bahan D dalam sebuah mangkuk dan gaul rata. Ketepikan).

Ingredients E 
(Bahan-bahan E)
1). Fried Bean curd - 1 or 2 pieces, sliced /
*(Tauhu Goreng - 1 atau 2 biji, dihiris)
2). Choy Sum -  100 grams, cut into segments /
*(Daun Sawi - 100 gram, dipotong kecil)
3). Bean Sprouts - 80 grams /
*(Taugeh - 80 gram)

Garnishing
(Bahan Hiasan)
1). Fried Shallots - to taste*Optional /
*(Bawang Goreng - ikut selera*Optional)
2). Red Chilli - 1 pieces, thinly sliced /
*(Cili merah - 1 biji, dihiris)
3). Green Chilli - 1 piece, thinly sliced )
*(Cili Hijau - 1 biji, dihiris)

-Oil for frying - Sufficient amount /
*(Minyak - secukupnya)
-Salt - to taste /
*(Garam - Secukup rasa)
-White pepper powder - 0.5 tsp or to taste /
*(Serbuk lada putuh - 0.5 sdt atau secukup rasa)
----
MethodπŸ‘‡
(Cara membuat)πŸ‘‡
1). Heat sufficient amount of oil in a wok, add in sliced Chicken breast and stir over medium heat till cooked. Then add in prawns and sliced fish ball and saute for about 3 minutes.
*(Panaskan minyak secukupnya dalam kuali dan masukkan hirisan dada ayam dan kacau rata dengan api sederhana hingga ayam masak. Kemudian, masukkan udang dan fish ball. Kacau dengan api sederhana selama 3 minit.)

2). Push the cooked ingredients C(Chicken, Prawns and Fish ball) aside to leave an empty space in the middle of the wok and put the blended ingredients(Ing.B) into the empty space. 
*(Tolak ayam, udang dan fish ball yang sudah masak ke tepi kuali bagi membentuk satu ruang kosong di tengah kuali dan masukkan bahan B(bahan kisar) ke dalam ruang kosong tersebut).

3). Stir fry the blended ingredient(B) over low heat till oil rises to the top. Then stir in ingredients D and season to taste with salt and white pepper powder.
*(Kacau bahan B(bahan kisar) dengan api kecil hingga pecah minyak. Masukkan bahan-bahan D dan perasakan dengan garam dan serbuk lada putih).

4)  Add in the Yellow Noodles and the scrambled egg. Stir well to combine over medium heat for a while. 
*(Masukkan Mee Kuning dan telur goreng hancur. Kacau rata hingga sebati dengan api sederhana seketika).

5). Add  Bean curd, bean sprouts and Choy Sum. Stir well over high heat for about 2 to 3 minutes and turn off the heat. 
"(Masukkan tauhu goreng, taugeh dan juga sawi. Kacau rata dengan api besar selama 2 hingga 3 minit dan padamkan api).

6). Dish out and garnish with sliced red/green chili and fried Shallots. Ready to be served.
*(Hiaskan dengan hirisan cili merah/hijau dan bawang goreng sebelum dihidang).
