If you are "Crab lovers", here's my Crab Curry recipe for you to try. I made this dish for our dinner last night and it was served with "Blue Pea Coconut Rice" @ Nasi Lemak Bunga Telang. This is my own recipe and I've been using it for more than 20 years. Well, I have nothing much to say about it...."all I know is that, it was "Finger-linkin' good".

Ingredients A
(Bahan-bahan A)
1). Crabs - 1.3 kg@4 medium size crabs, cut each crab into half, cleaned and drained /
*(Ketam - 1.3 kg@4 ketam sederhana besar, setiap ketam dibelah dua, bersihkan dan tos).
πMethod for A
(Cara membuat untuk A)
-Heat sufficient amount of oil in a wok. Add crabs in hot oil and blanch for about 3 minutes. Drain well and set aside.
*(Panaskan minyak secukupnya dalam kuali. Masukkan ketam dalam minyak panas dan goreng selama 3 minit. Tos dan ketepikan).

Ingredients B
(Bahan-bahan B)
1). Onion - 1 piece, thinly sliced /
*( Bawang besar - 1 biji, dihiris nipis)
2). Fenugreek seeds - 0.5 tsp /
*(Biji Halba - 0.5 sdt)
3). Curry Leaves - 2 sprigs, remove the leaves from the stems and discard the stems /
*(Daun Kari - 2 tangkai, ambil daun sahaja dan buang tangkai) /
4). Tomato - 60 grams, chopped /
*(Tomato - 60 gram, dicincang)

Ingredients C - finely blended
(Bahan - bahan B - kisar halus)
1). Shallots - 10 pieces, sliced /
*(Bawang merah - 10 biji, dihiris)
2). Garlic - 10 cloves, sliced /
*(Bawang putih - 10 ulas, hiris)
3). Ginger - 5 gram, sliced /
*(Halia - 5 gram, dihiris)
4). Dried Prawns - 2 tbsp /
*(Udang Kering- 2 Sdm)
5). Fish Curry Powder - 5 tbsp /
*(Serbuk Kari ikan - 5 Sdm)
6). Chilli Powder - 3 tbsp)
*(Serbuk Cili - 3 tbsp)
7). Turmeric Powder - 1 tsp /
*(Serbuk kunyit - 1 sdt)
8). Coriander Powder - 1 tsp /
*(Serbuk ketumbar - 1 sdt)
9). Fennel Powder - 1 tsp /
*(Serbuk Jintan Manis - 1 tsp)
10). Cumin Powder - 1 tsp /
*(Serbuk Jintan Putih - 1 sdt)
11). Water - 100 ml /
*(Air - 100 ml)
**Combine Ingredients B in a blender and blend until smooth.
(Masukkan semua bahan B dalam blender dan kisar halus).

Ingredients D
(Bahan - bahan D)
1). Salt - to taste /
*(Garam - ikut selera)
2). Anchovy stock cube - 2 cubes /
*(Kube Stok Ikan bilis - 2 kube)
3). Brown sugar - to taste /
*( Gula perang - ikut selera)
4). Thick coconut milk - 200 ml
*(Santan Pekat - 200ml)
5). Water - 700 ml, add more water if needed /
*(Air - 700 ml, tambah air jika perlu)
6). 1 Egg white + 5 tbsp of water, mixed well)
*(1 Putih telur + 5 Sdm air, campur rata)
7. Tamarind paste - 0.5 tsp /
*( Pes Assam jawan - 0.5 sdt)

Oil for frying - Sufficient amount /
*(Minyak - secukupnya)
----
Method π
(Cara membuat π)
1). Heat 6 tbsp(add oil if needed) of oil in a wok. Saute onion till fragrant and then add in curry leaves, fenugreek and chopped tomato. Stir briefly.
**(Panaskan 6 sdm minyak. Tumis bawang besar hingga wangi. Masukkan daun kari, biji halba dan juga tomato).
2). Add the blended ingredients (C). Stir well and cook over low heat until the oil rises to the top.
**(Masukkan bahan C dan gaul rata. Masak dengan api kecil hingga pecah minyak).
3). Add in 700ml of water, salt, anchovy stock, tamarind paste, egg white mixture and brown sugar. Stir well and bring the gravy to a boil over medium heat.
**(Tambah 700ml air, garam, Stok Ikan bilis, pes asam jawa, putih telur dan gula perang. Kacau rata dan masak dengan api sederhana hingga mendidih).
4). When the gravy is boiling, put in the blanched crab(A) and coconut milk. Stir well over medium heat till the gravy thickens.
*(Bila kuah sudah mendidih, masukkan ketam(A) dan santan pekat. Kacau rata dengan api sederhana hingga kuah pekat).
5). Once the gravy has thickened, turn off the heat. Dish out and ready to be served.
*(Bila kuah sudah pekat, tutup api dan sedia untuk dihidang).
