Hello wonderful people. I'm Nora Liban from Malaysia. Welcome to Nora Liban's Kitchen @ Norma Bty Kitchen. Thank you so much for coming by and I really appreciate it. I'm always so grateful with you all. If you are here for the first time, for your info, I've been posting recipes in my blog since 5th November 2020. My passion is cooking and I believe that everything I do with passion will make me feel fulfilled and satisfied/happy. Here're the ingredients for Satay dipping sauce;
Ingredients A
(Bahan - Bahan A)
1). Roasted Peeled Peanuts - 600 grams, coarsely ground. Note : Please do not blend too much otherwise it turn into peanut butter /
-(Kacang tanah pangang - 600 gram, blend kasar. Note : Jangan blend terlalu halus, nanti jadi peanut butter)

Ingredients B - finely blended
-(Bahan - Bahan B - kisar halus)
1). Shallot(s) - 8 pcs, sliced /
-(Bawang Merah - 8 biji, hiris)
2). Galangal - 80 grams, sliced /
-(Lengkuas - 80 grams, hiris)
3). Lemongrass - 6 stalks, white part only, sliced /
-(Serai - 6 batang, bahagian putih, hiris)
4). Dried Chilli - 80 grams, deseeded, soaked in hot water, drain well /
-(Cili kering - 80 gram, buang biji, rendam dalam air panas, toskan)
5). Garlic - 8 cloves, sliced /
-(Bawang Putih - 8 ulas, hiris)
6). Chilli powder - 2 tbsp /
-(Serbuk cili - 2 tbsp)
7). Coriander powder - 2 tbsp /
-(Serbuk ketumbar - 2 sdm)
8). Dried Prawns - 2 tbsp /
-(Udang Kering - 2 Sdm)
9). Cumin powder - 2 tsp /
-(Serbuk jintan putih - 2 sdt)

Ingredients C
-(Bahan - Bahan C)
1). Thick coconut milk - 200 ml /
-(Santan pekat - 200 ml)
2). Water - 2.5 litres /
-(Air - 2.5 liter)
3). Palm sugar - 6 tbsp or to taste /
-(Gula Melaka - 6 sdm atau ikut citarasa)
4). Granulated Sugar or brown sugar - 20 tbsp or to taste...I used organic brown sugar /
-(Gula pasir atau gula perang - 20 tbsp atau ikut citarasa...saya guna gula organic perang)
5). Salt - to taste /
-(Garam - ikut citarasa)
6). Chicken Stock - 2 cubes /
-(Pati ayam - 2 kiub)
7). Tamarind paste - 3 tsp /
-(Pes asam jawa - 3 sdt)
8). Oil - 10 tbsp or sufficient amount /
-(Minyak - 10 sdm atau secukupnya)
9). MSG - to taste-*optional*
-(MSG - ikut citarasa-*optional)

Method 👇
-(Cara membuat)👇
1). Heat 10 tbsp or sufficient amount of oil in a wok and stir-fry ingredients B until fragrant.
-(Panaskan 10 sdm atau secukupnya minyak dalam kuali. Tumiskan bahan B hingga wangi).
2). Add in water and coconut milk. Stir well and bring to boil over medium to high heat.
-(Masukkan air dan santan pekat. Kacau sekejap dan masak dengan api sederhana - besar hingga mendidih).
3). Then add in the ground roasted peanuts and remaining of ingredients C (palm sugar, salt, tamarind paste, chicken stock and granulated sugar/brown sugar). Stir well.
-(Masukkan kacang tanah yang telah dikisar, gula melaka, garam, pes asam jawa, stok ayam dan juga gula. Kacau rata).
4). Simmer over low heat and stir occasionally until sauce has thickened and oil floats to the surface. If the sauce is too thick then stir in a little hot water.
-(Masak dengan api kecil dan kacau sekali - sekala hingga kuah kacang menjadi pekat dan pecah minyak. Tambahkan sedikit air panas kalau kuah terlalu pekat).
5). Turn off the heat. Ready to be served.
-(Padamkan api. Sedia untuk dihidangkan).

DeleteIs it possible to add soya sauce to balance out the spiciness...
ReplyDeleteHello Chin. You may reduce the amount of dried chili to reduce the spiciness or deseed the dried chili. Add a little light soya sauce or fish sauce would be okay but not dark soya sauce. Dark soya sauce would make the taste weird and colour not attractive.

DeleteHi, can I replace the nuts with unflavoured peanut butter or isit better with real nuts
ReplyDeleteHi. You can substitute the nuts with unflavored Chunky peanut butter. I've tried with peanut butter before but I still prefer coarsely ground peanut.

ReplyDeleteSalam Syakila. Boleh juga ganti santan dengan Ideal Milk. Tapi kalau nak kuah satay yang super sedap kita kena guna santan kelapa fresh atau santan dlm kotak.

DeleteHi there, what is palm sugar? Is there any other substitutes for it. I can only find regular sugar in my location.
ReplyDeleteHello there. Palm sugar is made from Palm tree@Malaysian Palm tree and can be found in any grocery store in Malaysia and any Asian market through out the world. If you can't get Palm sugar in your area I would suggest that you substitute it with brown sugar or the regular sugar @ white sugar. Have a blessed day ahead.
