Hello wonderful people. I'm Nora Liban from Malaysia. Welcome to Nora Liban's Kitchen @ Norma Bty Kitchen. Thank you so much for coming by and I really appreciate it. I'm always so grateful with you all. If you are here for the first time, for your info, I've been posting recipes in my blog since 5th November 2020. My passion is cooking and I believe that everything I do with passion will make me feel fulfilled and satisfied/happy. Made my version of "Prawn And Pineapple In Spicy Coconut Milk" or in Malaysia, we call it "Udang Masak Lemak Cili Padi Dengan Nanas" for today's lunch. This dish is very simple and easy to prepare but the taste was great and simply comforting. This is one of my favourite dishes and here's the recipe that I've modified or invented to suit my own taste. My family loved it and I am confident that you won't regret if you give this recipe a try. If you don't have Coconut Milk at home, well, you may substitute it with Evaporated Milk but to be honest, Coconut Milk contribute to the amazing taste of this dish.

Ingredients for Prawn And Pineapple In Spicy Coconut Milk 👇.
Ingredients A.
(Bahan - Bahan A)
1). Medium Size Prawns - 1 kg, trimmed, deveined, rinsed and drained well /
*(Udang saiz sederhana - 1 kg, trim, buang usus, bersihkan dan tos)

Ingredients B.
(Bahan - Bahan B)
1). Lemongrass - 3 stalks, bruised /
*(Serai - 3 batang, diketuk)
2). Water - 1.3 litres * add more water if needed /
*(Air - 1.3 liter * tambah air jika perlu)
3). Thick Coconut milk - 300ml /
*(Santan Pekat - 300ml)
4). Turmeric leaves - 2 stalks, thinly sliced /
*(Daun kunyit - 2 keping, dihiris nipis)
5). Fenugreek - 1/2@0.5 tsp * Optional/
*(Biji Halba - 1/2@0.5 sdt * Optional)
6). Oil - 3 tbsp * add more if needed /
*(Minyak - 3 sdm * tambah jika perlu)

Ingredients C
(Bahan - Bahan C)
1). Garlic - 10 cloves, sliced /
*(Bawang Putih - 10 ulas, dihiris)
2). Fresh Chillies - 4 pcs, sliced /
*(Cili segar - 4 biji, hiris)
3). Bird's eye chili - 8 pcs, sliced /
*(Cili Padi - 8 biji, hiris)
4). Dried Prawns - 1 tbsp * Optional /
*(Udang kering - 1 sdm * Optional)
5). Fresh Turmeric - 20 grams "OR" you may use 2 tsp of turmeric powder as substitute if you don't have fresh turmeric at home/
*(Kunyit Segar - 20 gram "ATAU" 2 sdt serbuk kunyit sebagai ganti kalau tidak ada kunyit segar di rumah)
6). Fresh Ginger - 1/2@0.5 inch /
*(Halia Segar - 1/2@0.5 inci)
*Put all ingredients B in a blender and blend until fine.
*(Masukkan semua bahan B dalam satu blender dan kisar halus)

Ingredients D
(Bahan - Bahan D)
1). Fresh Pineapple - 250 grams, cut into bite-sized chunks /
*(Nenas Segar - 250 grams, dipotong ketulan bersaiz gigitan)
----
Seasonings
(Bahan Perasa)
1). Anchovy Stock cube - 1 cube "OR" 1 tsp of anchovy stock powder /
*(kube perasa ikan bilis - 1 kube "ATAU" 1 sdt serbuk perasa ikan bilis)
2). Brown sugar - to taste /
*(Gula Perang - ikut citarasa)
3). Salt - to taste /
*(Garam - Ikut citarasa)
4). MSG - to taste * Optional /
*(MSG - ikut citarasa * Optional)

Method👇
(Cara membuat👇)
1). Heat 3 tbsp of oil in a wok and stir fry lemongrass until fragrant.
*(Panaskan minyak dalam kuali dan tumis serai hingga wangi).
2). Add in the blended ingredients(C) and stir well over low heat till red color oil is visible.
*(Masukkan bahan C dan kacau rata dengan api kecil sehingga pecah minyak).
3). Then add 1.3 litres of water, fenugreek, Anchovy stock cube, salt and brown sugar. Stir briefly.
*(Masukkan 1.3 liter air, biji halba, kube perasa ikan bilis, garam dan gula perang. Kacau sekejap).
4). Bring to a rolling boil over high heat. Once boiling, lower the heat and add coconut milk, Pineapple(Ing.D) and half of the sliced turmeric leaves. Cook till pineapple softened over low - medium heat).
*(Masak dengan api besar hingga mendidih. Bila sudah mendidih kecilkan api dan masukkan santan, Nanas(Bahan D) dan juga separuh daripada hirisan daun kunyit. Masak dengan api kecil - sederhana hingga nenas lembut).
5) Lastly, add prawns, stir well and cook over medium heat for about five(5) minutes.
*(Akhir sekali masukkan udang, gaul rata dan masak dengan api sederhana selama lebih kurang 5 minit).
6). Once done, turn off the heat, dish out and garnish with the remaining sliced turmeric leaves. Ready to be served.
*(Bila udang sudah masak, padamkan api dan pindahkan udang ke dalam mangkuk. Hiaskan dengan baki hirisan daun kunyit tadi dan sedia untuk dihidangkan).
Wow, nice recommendations by Google. I was looking for a recipe to cook my freshly brought prawns. Finally an Asian recipe. So hard to find Asian cooking here in Wisconsin

DeleteCan you make suggestions for substitutions for hard to get ingredients in USA? Anchovy stock cubes and tumeric leaves may be hard to come by.
ReplyDeleteGood morning from Malaysia. Well, if you don't have turmeric leaves at home just leave out/exclude it from the ingredients. As long as you use fresh turmeric root or turmeric powder, the taste of this dish would still be great. As for the Anchovy stock cubes, I would suggest that you substitute it with 1(one) tbsp of "findly blended/pounded' dried Anchovies or dried prawn and if you can't get it, it's okay to leave it out/exclude. Tq
