I was craving for spicy food lately so I made Hot and Spicy Chicken Sambal for today's lunch with simple ingredients available in almost every home. I got this recipe from 'Mdm. Vasandra Davi Ramalingam' (I call her Auntie Vasandra) who is a Malaysian Indian, born in Kuala Lumpur and now residing in Subang Jaya, Selangor. Auntie Vasandra is definitely an expert in this area and she's my Malaysian Indian cuisine mentor. There are so many dishes available in Malaysia nowadays but this dish is  one of my top 10 favorite dishes. It's super yummy and you can pair it with steamed white rice, Roti Pratha, Nasi Lemak and etc;

Ingredients for Chicken SambalπŸ‘‡;
Ingredients A
(Bahan-Bahan A)
1.  Whole Chicken, chopped into 12 pcs - 1.3kg /
(Ayam - 1 ekor, dipotong 12 - 1.3 kg)

Ingredients B
(Bahan - Bahan B)
1. Onion - 4 pcs, thinly sliced /
(Bawang besar - 4 biji, hiris nipis)
2. Tomato - 80grams, chopped /
(Tomato - 80gram), dihiris)
3. Lemongrass - 3 stalks, bruised /
(Serai - 3 batang)
4. Oil - 4 tbsp - add more oil if needed/
(Minyak masak - 4 tbsp - tambah jika perlu)

Ingredients C -finely blended
(Bahan - Bahan C - kisar halus)
1. Dried Chilli - 30 pcs(40grams) or 6 tbsp of Chilli powder 
(Chilli kering - 30 biji(40gram) atau 6 sdm serbuk cili)
2. Garlic - 6 cloves, chopped /
( Bawang Putih - 6 ulas)
3. Shallot(s) - 6 pcs, sliced /
(Bawang merah - 6 biji)
4. Fresh ginger - 2 cm, sliced /
(Halia segar - 2 cm)

**Place Ingredients C in a blender and blend ingredients until fine.
(Masukkan bahan - Bahan C dalam satu blender dan kisar halus).

Ingredients D
(Bahan - Bahan D)
1. Salt - to taste
(Garam - ikut citarasa)
2. Chicken stock - 1 cube /
(Stok Ayam - 1 kube)
3. Brown sugar - to taste
(Gula perang - ikut citarasa)

Method
(Cara membuat πŸ‘‡πŸ‘‡πŸ‘‡)
1. Heat 4 tbsp of oil in a wok.
**(Panaskan 4 sdm minyak dalam kuali).

2. Stir fry sliced onion and lemongrass till fragrant.
**(Tumis bawang besar dan serai hingga wangi).

3. Add chopped tomatoes and cook for about 5 minutes over low heat or simmer until tomatoes and onions are beginning to break up.
**(Masukkan tomato dan masak dengan api kecil sehingga tomato dan bawang mula kelihatan hancur).

4. Then add blended ingredients(C) and stir over low heat until the oil rises to the top and red color oil is visible.
**(Masukkan bahan kisar(C), gaul dengan api kecil hingga pecah Minyak).

5. When the oil has separated from the blended ingredients, add in chicken pieces and mix well. Simmer over low - medium heat until the chicken excretes liquid.
**(Masukkan Ayam dan gaul rata. Masak dengan api kecil dan sederhana hingga ayam mengeluarkan cecair).

6. Add water barely to cover the chicken followed by Chicken cube, salt and sugar. Mix well. 
**(Masukkan air hingga cukup menutupi Ayam sahaja. Tambah kube Ayam, garam dan gula perang. Gaul rata).

7. Simmer over low to medium heat and stir occasionally until the gravy thickens. 
**(Masak dengan api kecil dan sederhana dan gaul sekali sekala hingga kuah pekat).

8. Once the gravy has thickened, turn off the heat. Dish out and ready to be served!!l.
**(Bila kuah dah pekat, padamkan api dan sedia untuk dihidang).
