A friend of mine gave me few pieces of green eggplant yesterday and I cooked some with fried anchovies for last night's dinner. If you're eggplant lovers, kindly take a look at these easy ways to cook them. It was absolutely delicious and you can pair this dish with anything you like;

Ingredients for Spicy Green Eggplants With Fried AnchoviesπŸ‘‡;
Ingredients A
(Bahan-Bahan A)
1). Green Eggplants - 500 grams, halved Lengthwise then cut into segments /
*(Terung Hijau - 500 gram, dibelah dua dan dipotong beberapa bahagian).
2). Salt - 0.5 tsp /
*( Garam - 0.5 sdt).
πŸ‘Mix ingredients A well and set aside for 5 minutes. 
*(Gaulkan bahan-bahan A dan ketepikan selama 5 minit).
πŸ‘Heat enough oil in a wok and shallow fry eggplant till half cooked.  Remove, drain well on paper towel.
*(Panaskan minyak secukupnya dalam kuali dan goreng terung hingga separuh masak. Toskan atas tisu dapur dan ketepikan).

Ingredients B
(Bahan - Bahan B)
1). Fried anchovies - 50 grams /
*( Ikan bilis goreng - 50 gram)

Ingredients C 
(Bahan - Bahan C)
1). Shallot(s) - 6 pieces, sliced /
*(Bawang merah - 6 biji, dihiris)
2). Garlic - 6 cloves, sliced /
*(Bawang Putih - 6 biji, dihiris)
3). Fresh Red Chili - 3 pieces, sliced /
*(Cili Segar - 3 biji, dihiris)
4). Bird's eye chili - 2 pieces * optional/
*(Cili padi - 2 biji * optional)
πŸ‘‰ Combine ingredients C in a blender and blend coarsely.
*( Masukkan Bahan C dalam blender dan blend kasar).

Ingredients D
(Bahan - Bahan D)
1). Onion - 2 pieces, sliced/
*(Bawang besar - 2 biji, dihiris)
2). Fresh Green chilli - 3 pieces, sliced)
*(Cili Hijau Segar - 3 biji, dihiris)
3). Kaffir Lime leave - 1 piece, centre spine removed, sliced * NOTE : Do not include the centre spine because  it's bitter /
*(Daun Limau Purut - 1 keping, buang urat tengah, dihiris * Note : Buang urat tengah daun limau purut sebab ianya berasa pahit)

Ingredients E
(Bahan - Bahan E)
1). Oyster sauce - 1 tbsp/
*(Sos tiram - 1 tbsp)
2). Anchovies stock powder - 2 tsp)
*(Serbuk Stok ikan bilis - 2 sdt)
3). Salt - to taste /
*(Garam - secukup Rasa)

Oil - sufficient amount /
*(Minyak - secukupnya)
----
Methods
(Cara membuat)
1). Heat 5 tbsp of oil in a pan. Add the blended ingredient (Ing.C) and stir fry till crisp.
*(Panaskan 5 sdm minyak dalam kuali dan tumis bahan kisar (bahan C) hingga garing).

2). Add ingredients D and stir fry briefly. Then add in Oyster sauce and stir well. 
*(Masukkan bahan D dan kacau sekejap. Kemudian masukkan sos tiram dan kacau rata). 

3). Put in the half cooked eggplant(Ing. A), Anchovies stock powder and salt. Stir fry well over low heat till done.
*(Masukkan terong yang telah digoreng separuh masak(bahan A), serbuk perasa ikan bilis dan garam. Kacau rata dengan api kecil hingga masak sepenuhnya).

4). Lastly, add fried anchovies(Ing. B) and stir well to combine over low heat for a while. Turn off the heat and it's ready to be served.
*(Akhir sekali, masukkan ikan bilis goreng (bahan B) dan kacau rata seketika dengan api kecil. Padamkan api dan sedia untuk dihidang).
