Our lunch today is very simple. We had fried rice, famously known as "Nasi Goreng Kampung" in Malaysia, which simply means "Village-Style Fried rice". If you have anchovies at home, you can make nice "Nasi Goreng Kampung" right there in your kitchen with this recipe which I inherited from my mother but I've modified it to suit my taste by adding fresh red chilies in my blended ingredients. Hmmmm......, it was so yummy.

Ingredients for Village-Style Fried Rice;πŸ‘‡
Ingredients A
(Bahan - Bahan A)
1). Cold Cooked Rice - 500 grams /
*(Nasi Sejuk - 500 gram)
2). Fried Anchovies - 40 grams /
*(Ikan Bilis goreng - 40 gram)
3). Eggs - 2 pieces, - beaten. Heat enough oil in a pan, add the beaten egg and scramble it, removed and set aside.
*(Telur - 2 biji, dipukul. Panaskan minyak secukupnya dan masukkan telur - kacau hingga hancur. Ketepikan)

Ingredients B - Coarsely Blended
(Bahan-bahan B - Blend Kasar)
1). Garlic - 2 cloves, sliced /
*(Bawang putih - 2 ulas, dihiris)
2). Shallots - 2 pieces /
*(Bawang Merah - 2 biji dihiris)
3). Anchovies - 2 tbsp /
*(Ikan bilis - 2 sdm)
4). Dried Prawns - 1 tbsp /
*(Udang kering - 1 Sdm)
5). Fresh Chilli - 4 pieces, deseeded, sliced /
*(Cili segar - 4 biji, buang biji kalau tak nak pedas, dihiris)
6). Bird's eye chili - 4 pieces  or adjust to your preference /
*(Cili Padi - 4 biji atau ikut selera)
πŸ‘‰Combine Ingredients B in a blender and blend coarsely.
*(Masukkan semua bahan-bahan B dalam blender dan blend kasar).

Ingredients C
(Bahan-bahan C)
1). Long Bean - 100 grams, cut into small pieces /
*(Kacang panjang - 100 gram, dipotong kecil)
2).  Fresh Chili - 2 pieces, deseeded and cut diagonally /
*(  Cili segar - 2 biji, buang biji kalau tak nak pedas. Potong serong)
3). Carrot - 50 grams, cut into small pieces  /
*( Lobak merah - 1 biji, dipotong kecil )
4). Choy Sum or Water Spinach - 50 grams, cut into segments /
*(Sawi atau Kangkung- 50 gram, dipotong beberapa bahagian)
5). Onion - 1 piece, sliced /
*(Bawang Besar - 1 biji, dihiris)

Ingredients D
( Bahan-bahan D)
1). Maggi Seasoning Sauce - few drops or to taste /
*(Sos Perasa Maggi - beberapa titisan atau secukup rasa)
2). Anchovy Seasoning Powder -(0.5)half tsp or to taste /
*(Serbuk Perasa Ikan Bilis - (0.5)setengah sdt atau secukup rasa)
3). Salt - to taste /
*(Garam - Secukup rasa)
4). White pepper powder - to taste /
*(Serbuk lada putih - ikut citarasa)

-Oil for frying - Sufficient amount /
*(Minyak - secukupnya)
-Fried Shallots - to taste * optional
*(Bawang goreng - ikut selera * optional

MethodπŸ‘‡
(Cara membuat)πŸ‘‡
1. Heat 6 tbsp(add oil if needed) of oil in a wok, then saute' ingredients B until crisp.
*(Panaskan minyak secukupnya dalam kuali dan tumis bahan-bahan B hingga garing).

2. Add in long bean, chili, choy Sum, onion and carrot,  stir fry well for about 2 minutes over medium heat.
*(Masukkan Kacang panjang, Cili, Sawi, bawang dan juga lobak merah dan kacau rata selama lebih kurang 2 minit dengan api sederhana).

3. Put in anchovy stock and Maggi seasoning sauce, stir briefly and then season to taste with salt and Pepper Powder.
*(Masukkan serbuk perasa ikan bilis dan juga sos perasa maggi, kacau sekejap dan perasakan dengan garam dan serbuk lada putih).

4. Add in rice and scrambled egg,  stir fry well over high heat until well combined. 
*(Masukkan nasi dan telur goreng dan kacau rata dengan api besar hingga sebati).

5. Lastly, add fried anchovies and stir well for a while then turn off the heat. Dish out, sprinkle some fried onion on the fried rice if you like and it's ready to be served.
*(Akhir sekali masukkan ikan bilis goreng dan kacau rata seketika dan matikan api. Taburkan bawang goreng atas nasi goreng sebelum dihidang kalau suka. Sedia untuk dihidang).
