I bought some fresh Stingray fish meat yesterday morning and I cooked it with Bilimbi in coconut milk for yesterday's dinner. I've made this dish lots if times for my family because it is quite easy to prepare. This is my mother's recipe and it is well liked by my family and friends and we normally pair it with steamed white rice and other side dishes. If you feel like to give this recipe a try but there's no Bilimbi in your area, well, you may use dried tamarind slices as substitute. Note: For 1(one) kg of fish, 3 to 4  slices of dried tamarind would be enough.

Ingredients for Stingray Fish And Bilimbi in Coconut Milk;

Ingredients A
(Bahan - Bahan A)
1). Stingray Fish - 1.1 kg, cut into cubes or small pieces, rinsed and drained well /
*(Ikan Pari - 1.1 kg, potong kecil, cuci dan toskan)
2). Turmeric Powder - 2 tsp /
*(Serbuk Kunyit - 2 sdt)
3). Salt - 2 tsp /
*(Garam - 2 sdt)

Ingredients B
(Bahan - Bahan B)
1). Lemongrass - 3 stalks, bruised /
*(Serai - 3 batang, ketuk)
2). Water - 1.6 liters or sufficient amount/
*(Air - 1.6 liter atau secukupnya)
3). Thick Coconut milk - 300ml /
*(Santan Pekat- 300ml)
4). Turmeric leaves - 2 stalks, julienne /
*(Daun kunyit - 2 keping, hiris nipis)
5). Bilimbi - 10 pieces /
*(Belimbing Buluh - 10 pieces)
6). Fenugreek - 1/2 tsp /
*(Biji Halba - 1/2 sdt)
7). Oil - 3 tbsp * add more oil if needed/
*(Minyak - 3 sdm * tambah minyak jika perlu)

Ingredients C
(Bahan - Bahan C)
1). Fresh Turmeric - 20 grams /
*(Kunyit Segar - 20 grams)
2). Garlic - 8 cloves, sliced /
*(Bawang Putih - 8 ulas, hiris)
3). Fresh Chillies - 3 pcs, sliced /
*(Cili segar - 3 biji, hiris)
4). Shallots - 8 pcs, sliced /
*(Bawang merah - 8 biji, hiris)
5). Dried Prawns - 1 tbsp /
*(Udang kering - 1 sdm)
6). Bird's Eye Chili - 6 pieces /
*(Cili Padi - 6 biji)
7). Ginger - 2 cm /
*(Halia - 2 cm)
*Put all ingredients C in a blender and blend until fine.
*(Masukkan semua bahan C dalam satu blender dan kisar halus)

Seasonings/Bahan Perasa
1). Anchovy Stock cube - 2 cubes * optional /
*(Kube Perasa Ikan Bilis - 2 kube * optional)
2). Brown sugar - to taste /
*(Gula Perang - ikut citarasa)
3). Salt - to taste /
*(Garam - Ikut citarasa)

Method
(Cara membuat)

1). Place A in a bowl and mix well. Marinate for 15 minutes.
*(Masukkan semua bahan A dalam sebuah mangkuk dan gaul rata. Perap selama 15 minit).

2). Heat sufficient amount of oil in a pan/wok and deep fry the marinated fish till golden brown. Drain well on paper towel and set aside). 
*(Panaskan minyak secukupnya dan goreng ikan yang telah diperap hingga warna keperangan. Toskan atas tisu dapur dan ketepikan).

3). Next, heat 3 tbsp(add more if needed) of oil in a wok and stir fry lemongrass until fragrant.
*(Panaskan minyak dalam kuali dan tumis serai hingga wangi).

4). Add in the blended ingredients(C) and stir well over low heat until red colour oil is visible.
*(Masukkan bahan C dan kacau rata dengan api kecil sehingga pecah minyak).

5). Then add 1.6 liters of water, fenugreek, Anchovy stock cube, salt and brown sugar. Stir briefly.
*(Masukkan 1.6 liter air, biji halba, kube perasa ikan bilis, garam dan gula perang. Kacau sekejap).

6). Bring to a boil over high heat. Then add coconut milk and half of the julienned turmeric leaves. Stir briefly).
*(Masak dengan api besar dan selepas itu masukkan santan dan juga separuh hirisan daun kunyit. Kacau sekejap).

7) Add in the fried Stingray and bilimbis. Stir well over high heat for about five(5) minutes.
*(Masukkan Ikan Pari goreng dan belimbing buluh, gaul rata dan masak dengan api besar selama 5 minit.

8). Then cover the wok and let it simmer for another 5 minutes over medium heat and once done turn off the heat. Dish out and garnish with the remaining turmeric leave. Serve immediately while it's hot.
*(Selepas itu, tutup kuali dan masak lagi dengan api sederhana selama 5 minit. Bila sudah masak sepenuhnya,  tutup api dan hiaskan dengan baki daun kunyit. Hidang semasa masih panas).
