Are you fed up of eating restaurant's fried Chicken? What about making your own fried chicken at home? Well, here's my version of Spiced Fried Chicken recipe which I've been using for more than 20 years. I got it from a friend of mine, who was a cook at a Malaysian Indian restaurant where I used to have lunch with my colleagues. But, I've modified the recipe to suit my taste by adding tapioca flour, egg white, curry leaves and chicken seasoning powder. If you don't have tapioca flour at home, you can substitute it with potato starch, corn flour or all purpose flour. I prefer to use tapioca flour as it makes the exterior/outer layer of the fried chicken extra crispy and crunchy when mixed with egg white but stay moist on the inside and it stays crispy even after it gets cold.

Ingredients for the Spiced Fried Chicken;
Ingredients A
(Bahan-Bahan A)
1). Chicken Wings - 1kg to 1.2kg @ 12 pieces /
-(Kepak Ayam - 1kg - 1.2kg @ 12 keping)
2). Egg white - 1 egg white - note : exclude the egg yolk /
-(Putih telur - 1 putih telur - note : jangan masuk kuning telur)
3). Curry leaves - 5 pieces /
-(Daun Kari - 5 keping)

Ingredients B - Finely blended
(Bahan-Bahan B - kisar halus)
1). Fresh ginger - 3 cm, sliced /
-(Halia - 3 cm, dihiris)
2). Lemongrass - 4 stalks, white part only, sliced /
-(Serai - 4 batang, bahagian putih sahaja, dihiris)
3). Garlic - 8 cloves, sliced /
-(Bawang Putih - 8 ulas, dihiris)
4). Galangal - 5 grams /
-(Lengkuas - 5 gram)
5). Coriander powder - 2 tsp /
-(Serbuk ketumbar - 2 sdt)
6). Fennel Powder - 2 tsp /
-(Serbuk jintan Manis - 2 sdt)
7). Meat curry powder - 1/2@0.5 tbsp /
-(Serbuk Kari daging - 1/2@0.5 Sdm)
8). Chilli powder - 1 tbsp /
-( Serbuk Cili - 1 sdm)
9). Turmeric Powder - 1 tsp /
-(Serbuk Kunyit - 1 sdt)

Ingredients C
(Bahan-Bahan C)
1). Salt - to taste /
-(Garam - secukup rasa)
2). Chicken seasoning Powder - 2 tsp /
-(Serbuk Perasa Ayam - 2 sdt)
3). Brown sugar or Palm Sugar - 1 tsp /
-(Gula Perang atau gula Melaka - 1 sdt)
4). MSG - to taste-*optional*
-(MSG - secukup rasa-*optional*

Ingredients D
(Bahan-Bahan D)
1. Tapioca Flour/Potato starch/Corn Starch/All purpose flour - 200 grams or sufficient amount /
-(Tepung Ubi /Tepung kentang/Tepung Jagung/Tepung serbaguna - 200 gram atau secukupnya)

Ingredients E
1. Curry leaves - 2 sprigs, remove the leaves from the stems and discard the stems /
-(Daun Kari - 2 tangkai, ambil daun sahaja dan buang tangkai)
2. Oil for deep frying - sufficient amount /
-(Minyak untuk mengoreng - secukupnya)

Method
(Cara membuat)
1). Put ingredients B in blender and blend until fine.
-(Masukkan bahan - bahan B dalam blender dan kisar halus).
2). Combine the blended ingredients(B) with ingredients A(Chicken Wings, Egg white and 5 pieces of curry leaves), season with salt, chicken seasoning powder and brown sugar/palm sugar(Ingredients C). Mix well and keep to marinate in the fridge for 3 to 4 hours.
-(Campurkan bahan-bahan B dengan bahan A(kepak ayam, putih telur dan 5 keping daun kari). Perasakan dengan garam, serbuk perasa ayam dan gula perang atau gula melaka. Campur rata dan perap selama 3 hingga 4 jam dalam peti sejuk).
3). Remove the marinated chicken wings from the fridge and let it sit in room temperature for about half an hour.
-(Keluarkan ayam dari peti sejuk dan biarkan berada dalam suhu bilik selama lebih kurang setengah jam).
4). Heat enough oil in a wok/pan.
-(Panaskan minyak secukupnya dalam kuali).
5). Coat the marinated chicken wings evenly with ingredients D(tapioca flour/ potato starch/all purpose flour), shake off the excess flour and deep fry the chicken wings for about 8-10 minutes or until golden brown.
-(Salutkan kepak ayam dengan tepung ubi/tepung kentang/tepung serbaguna dan goreng dalam minyak panas selama 8 - 10 minit atau hingga warna keemasan).
6). When the chicken has turned golden brown, add in the curry leaves(ingredients E) with the fried chicken and continue to fry for 1 minute.
-(Bila ayam sudah berwarna perang keemasan, masukkan daun kari bersama dengan ayam goreng dan teruskan goreng selama satu minit).
7). Remove the fried chicken and the fried curry leaves from the wok/pan and drain on paper towel. Ready to be served.
-(Keluarkan ayam goreng dan juga daun kari goreng dari kuali dan toskan atas tisu dapur. Sedia untuk dihidang).
