( I ). Satay Dipping Sauce.

Here's my version of Chicken Satay and Satay Dipping Sauce recipe for you to try and I believe that majority of Malaysian are Satay lovers. In Malaysia, this dish is loved by many, including me. A great Malaysian Satay is very versatile and easy to make dish and you can marinate it with any of your preferred ingredients.  For those of you who've never heard of the word "Satay" then I've to explain to you briefly...alright...Satay is a dish consisting of small pieces of meat grilled on a bamboo skewer and served with a type of dipping sauce called "Peanut Sauce or Satay Sauce. Instead of using chicken for this recipe, you can even use beef, lamb, mutton and etc.... the taste would be equally tasty.

Ingredients for Satay dipping sauce;

Ingredients A

(Bahan - Bahan A)

1). Roasted Peeled Peanuts - 600 grams, coarsely ground. Note : Please do not blend too much otherwise it turn into peanut butter /

-(Kacang tanah pangang - 600 gram, blend kasar. Note : Jangan blend terlalu halus, nanti jadi peanut butter)

Ingredients B - finely blended

-(Bahan - Bahan B - kisar halus)

1). Shallot(s) - 8 pcs, sliced /

-(Bawang Merah - 8 biji, hiris)

2). Galangal - 80 grams, sliced /

-(Lengkuas - 80 grams, hiris)

3). Lemongrass - 6 stalks, white part only, sliced /

-(Serai - 6 batang, bahagian putih, hiris)

4). Dried Chilli - 80 grams, deseeded, soaked in hot water, drained /

-(Cili kering - 80 gram, buang biji, rendam dalam air panas, toskan)

5). Garlic - 8 cloves, sliced /

-(Bawang Putih - 8 ulas, hiris)

6). Chilli powder - 2 tbsp *Optional/

-(Serbuk cili - 2 tbsp * Optional)

7). Coriander powder - 2 tbsp /

-(Serbuk ketumbar - 2 sdm) 

8). Dried Prawns - 2 tbsp /

-(Udang Kering - 2 Sdm)

9). Cumin powder - 2 tsp /

-(Serbuk jintan putih - 2 sdt)

Ingredients C

-(Bahan - Bahan C)

1). Thick coconut milk - 200 ml /

-(Santan pekat - 200 ml)

2). Water - 2.5 litres /

-(Air - 2.5 liter)

3). Palm sugar - 6 tbsp or to taste /

-(Gula Melaka - 6 sdm atau ikut citarasa)

4). Granulated Sugar or brown sugar - 20 tbsp or to taste...I used organic brown sugar /

-(Gula pasir  atau gula perang - 20 tbsp atau ikut citarasa...saya guna gula organic perang)

5). Salt - to taste /

-(Garam - ikut citarasa)

6). Chicken Stock - 2 cubes /

-(Pati ayam - 2 kiub)

7). Tamarind paste - 3 tsp /

-(Pes asam jawa - 3 sdt)

8). Oil - 10 tbsp or sufficient amount /

-(Minyak - 10 sdm atau secukupnya)

9). MSG - to taste-*optional*

-(MSG - ikut citarasa-*optional)

Method ๐Ÿ‘‡๐Ÿ‘‡๐Ÿ‘‡

-(Cara membuat)๐Ÿ‘‡๐Ÿ‘‡๐Ÿ‘‡

1). Heat 10 tbsp or sufficient amount of oil in a wok and stir-fry ingredients B until fragrant or until red color oil is visible.

-(Panaskan 10 sdm atau secukupnya minyak dalam kuali. Tumiskan bahan B hingga wangi atau hingga pecah minyak.


2). Add in water and coconut milk. Stir well and bring to boil over medium - high heat.

-(Masukkan air dan santan pekat. Kacau sekejap dan masak dengan api sederhana - besar hingga mendidih).


3). Then add in the ground roasted peanuts and remaining of ingredients C (palm sugar, salt, tamarind paste, chicken stock and granulated sugar/brown sugar). Stir well.

-(Masukkan kacang tanah yang telah dikisar, gula melaka, garam, pes asam jawa, stok ayam dan juga gula. Kacau rata).


4). Simmer over low heat and stir occasionally until sauce has thickened and oil floats to the surface. If the sauce is too thick then stir in a little hot water. 

-(Masak dengan api kecil dan kacau sekali - sekala hingga kuah kacang menjadi pekat dan pecah minyak. Tambahkan sedikit air panas kalau kuah terlalu pekat).


5). Once done, turn off the heat and the sauce is ready to be served.

-(Bila sudah masak, padamkan api dan kuah satay sedia untuk dihidang).

( II ). Chicken Satay Recipe.

Ingredients A
(Bahan - Bahan A)
1). Chicken breast or Boneless Chicken thigh - 1.2 kg to 1.3 kg, rinsed, drained and cut into 1-inch cubes - for this recipe I used chicken thighs meat because it has more flavor and stays tender even if you  over grilled it.
**(Daging dada ayam/Daging Paha ayam tanpa tulang - 1.2 kg hingga 1.3 kg, cuci, potong dlm 1 inci kiub)

(Bahan - Bahan B - Kisar halus)
1). Galangal - 120 grams, sliced /
**(Lengkuas - 120 gram, hiris)
2). Ginger - 15 grams, sliced /
**(Halia - 15 gram, hiris)
3). Lemongrass - 6 stalks, white inner part only@tender section of the bulb, sliced /
**(Serai - 6 batang, bahagian putih sahaja, hiris)
4). Coriander powder - 4 tbsp /
**(Serbuk ketumbar - 4 sdm)
5). Cumin powder - 4 tsp /
**(serbuk jintan putih - 4 sdt)
6). Chilli Powder - 4 tsp /
**(Serbuk Cili - 4 sdt)
7). Turmeric Powder - 6 tsp /
**(Serbuk Kunyit - 6 sdt)
8). Shallot(s) - 10 pcs, sliced /
**(Bawang Merah - 10 biji, hiris)9). 
9). Garlic - 10 cloves, sliced /
**(Bawang Putih - 10 ulas, hiris)
10). Fennel powder - 2 tsp /
**(Serbuk jintan manis - 2 tsp /
Put all ingredients B in a blender and blend until fine.
**(Masukkan semua bahan B dalam blender dan kisar halus)

(Bahan - Bahan C)
1). Palm Sugar - 4 tbsp /
**(Gula Melaka - 4 sdm)
2). Granulated/White sugar or brown sugar - 12 tbsp or to taste /
**(Gula pasir atau gula perang - 12 sdm atau ikut citarasa)
3). Tamarind paste -1 tsp /
**(Pes asam jawa - 1 sdt)
4). Salt - 2 tsp /
**(Garam - 2 sdt)
5). Chicken seasoning powder - 4 tsp /
**(Serbuk perasa ayam - 4 sdt)
6). Oil - 4 tbsp /
**(Minyak - 4 sdm)

Ingredients D
(Bahan - Bahan D)
1). Oil - 1/2(half) cup/
**(Minyak - 1/2(Setengah) cawan)
2). Ingredient B/blended ingredients - 1 tsp /
**(Bahan B/bahan kisar - 1 sdt)
Put ingredients D in a bowl and mix well.
**(Masukkan bahan D dalam sebuah mangkuk dan gaul rata.

๐Ÿ‘‰25cm Bamboo Skewers - 50 to 55pcs, soaked in water for about 30 minutes /
**(Lidi buluh - 50 hingga 55 batang, rendam sekejap dalam air)

Method
(Cara Membuat)
1). Place A(Chicken pieces) in a large bowl. Add the blended ingredients(B) and ingredients C with the chicken pieces and toss well. Leave to marinate in the refrigerator for at least 10 hours or overnight. 
**(Masukkan A (ayam) dalam satu mangkuk dan tambahkan bahan kisar (B) dan juga bahan C. Campur rata dan perap sekurang - kurangnya 10 jam atau satu malam dalam peti sejuk).

2). Then thread/spear  4 - 5 pieces of the marinated meat onto each skewer.
**(Masukkan 4 - 5 keping daging yang telah diperap pada lidi hingga selesai).

3). Grill or barbecue the meat over charcoal fire but if you prefer to use a non stick grill pan then you can go ahead with it. For this recipe I used non stick grill pan to grill my satay. 
**(Bakar daging dengan mengunakan dapur arang. Kalau tak ada dapur arang, kamu juga boleh guna non stick pan untuk membakar satay).

4). While grilling, brush the oil mixture(D) onto the meat with a heat resistant barbecue/pastry brush or a stalk of bruised lemongrass.  
**(Sapu bahan D(minyak) pada daging semasa proses membakar dengan mengunakan heat resistant barbecue/pastry brush ataupun batang serai yang telah diketuk).

5). Flip the meat frequently in order to prevent the meat from burning until it is cooked through and slightly charred  for about 3-4 minutes on each side. 
**(Balikkan daging selalu untuk mengelakkan daging terbakar.  Bakar hingga daging betul-betul masak dan sedikit hangus dalam lebih kurang 3 - 4 minit untuk satu belah).

6). Once done, serve it with Peanut sauce @ Satay Sauce, Cucumber slices, tomato slices, Compressed rice @ Nasi himpit and etc.
**(Bila sudah masak, hidang dengan kuah satay@kuah kacang, timun, tomato, nasi himpit dan sebagainya).
