Here's my version of Super Crispy and Flaky Garlic fried Chicken and I've made this dish a couple of times for my family and today, I'm very delighted to share the recipe with you. Well, I've nothing much to say about it. It was so scrumptious and the crispiness can last up to 12 hours. You can pair it with whatever you like or you can just eat it on its own.

Ingredients For Super Crispy & Flaky Garlic Fried Chicken๐Ÿ‘‡;
Ingredients A
(Bahan - Bahan A)
1. One whole Chicken - chopped into 12 pieces  @ 1.3 kg /
(Ayam - dipotong 12 @ 1.3 kg)

Ingredients B
(Bahan-Bahan B)
1.Garlic powder - 2 tsp/
(Serbuk bawang putih - 2 sdt)
2.White Pepper Powder - 4 tsp/
(Serbuk lada putih - 4 sdt)
3.Chillie powder - 3 tsp/
(Serbuk cili - 3 sdt)
4.Chicken seasoning powder - 2 tsp/
(Serbuk perasa ayam - 2 sdt)
5. Soda bicarbonate - 1/8 tsp/
(Soda bicarbonate - 1/8 sdt)
6.Salt - to taste/
(Garam - ikut citarasa)
7. MSG - to taste*Optional /
(MSG - ikut citarasa*Optional)
**Add Ingredients B with the Chicken pieces(Ingredients A). Mix well and leave to marinate in the refrigerator for at least 2 hours.
**(Campurkan bahan - bahan B dengan potongan ayam dan perap sekurang-kurang dua jam dalam peti sejuk).

Ingredients C - Crispy Fried Chicken flour.
(Bahan - Bahan C - Tepung Crispy Fried Chicken).
1. High Protein flour@Bread flour - 300g/
(Tepung protein Tinggi@Tepung Roti- 300g)
2.Potato Starch/Tapioca flour- 80g/
(Tepung Kentang/Tepung Ubi - 80g)
3.Rice flour - 50g/
(Tepung Beras - 50g)
4). Garlic Powder - 1 tbsp /
(Serbuk Bawang Putih - 1 Sdm)
**Combine all Ingredients C in a bowl. Mix well and set aside.
**(Satukan bahan - bahan C dalam satu mangkuk, gaul rata dan ketepikan).

Ingredients D - For the batter.
(Bahan - Bahan D - Untuk batter)
1.High protein flour@bread flour - 120g/
(Tepung protein tinggi@tepung roti - 120g)
"Note" : You might be wondering why I used high protein flour and why not all purpose flour. The answer is; if you want your fried chicken to be flaky, use high protein flour. High protein flour has more gluten in it, which makes it more elastic and light.
("Nota" : Mengapa saya guna tepung berprotein tinggi dan kenapa tak guna tepung serbaguna. Jawapan : Kalau nak ayam goreng yang flaky, sila guna tepung protein tinggi sebab tepung ni tak mudah putus atau elastic bila dicampur dengan air).
2.Potato Starch/Tapioca flour - 60g/
(Tepung Kentang/Tepung Ubi - 60g)
3.Rice flour - 30g/
(Tepung beras - 30g)
4.Egg White - from 3 eggs, exclude the egg yolks/
**(Putih Telur - dari 3 biji telur, buang kuning telur)
5.Vinegar - 1 tbsp/
(Cuka - 1 sdm)
6.Bicarbonate of soda - 1/8 tsp /
(Soda bicarbonate - 1/8 sdt)
Note: Soda bicarbonate works well with vinegar for a super crispy and crunchy fried chicken...."NOT" baking powder. 
(Nota: Campuran Soda bicarbonate dengan cuka sesuai untuk membuat ayam goreng crispy..."BUKAN" baking powder). 
7.Salt - to taste/
(Garam - ikut citarasa)
8.White Pepper powder - 2 tsp/
(Serbuk lada putih - 2 sdt)
9.Chicken seasoning - 1 tsp/
(Serbuk perasa ayam - 1 sdt)
10. Garlic Powder - 2 tsp /
(Serbuk Bawang Putih - 2 sdt)
11. MSG - to taste*Optional/
(MSG - Ikut Citarasa*Optional)
12. Water - 1/2 cup /
(Air - 1/2 cawan)
**Combine all Ingredients D in a bowl and mix well.
**(Satukan semua bahan - bahan D dalam satu mangkuk dan gaul rata).

Method
(Cara membuat )
1. Heat 1 liter of oil in a wok.
**(Panaskan 1 liter minyak dlm kuali).

2. Add Ingredients D(batter) with the marinated Chicken  and mix well.
**(Campurkan batter (bahan D) dengan ayam yang telah diperap dan gaul rata).

3. Coat the marinated Chicken with Crispy Fried Chicken flour(Ingredients C) in batches 'gently' for about 2 minutes.
**(Salutkan ayam dengan Tepung Crispy Fried Chicken(bahan C) secara berperingkat dengan lembut@berhati-hati selama lebih kurang 2 minit).

4. Shake off the excess flour from the marinated chicken and then deep fry the coated Chicken for about 8 minutes or till golden brown over low - medium heat. 
**(Kemudian gorengkan ayam dengan minyak penuh selama 8 minit atau hingga kuning keemasan dengan api kecil - sederhana).

5. Once the fried Chicken is done, remove it and drain the excess oil on a paper towel. Ready to be served.
**(Bila ayam sudah masak, angkat dan toskan atas kitchen towel. Sedia untuk dihidang).
