Ingredients for Purple Eggplants With minced Chicken meatπŸ‘‡;
Ingredients A
(Bahan-Bahan A)
1). Purple Eggplants - 1 kg, halved lengthwise then cut into segments /
*(Terung Unggu - 1 kg, dibelah dua dan dipotong beberapa bahagian).
2). Salt - 2 tsp /
*( Garam - 2 sdt).
3). Turmeric powder - 1 tsp * optional /
*(Serbuk kunyit - 1 sdt * optional)
πŸ‘In a bowl, mix ingredients A well and set aside for 5 minutes. 
*(Gaulkan bahan-bahan A dan ketepikan selama 5 minit).
πŸ‘Heat enough oil in a pan and shallow fry eggplant till 3/4 cooked.  Remove and drain well on paper towel. Set aside.
*(Panaskan minyak secukupnya dalam kuali dan goreng terung hingga 3/4 masak. Toskan atas tisu dapur dan ketepikan).

Ingredients B
(Bahan - Bahan B)
1. Chicken Breast Meat/Boneless Chicken thigh - 300grams, chopped into tiny bits /
-(Daging dada ayam/paha ayam tanpa tulang - 300gram, potong kecil)
2. "Maggi Cukup Rasa" seasoning powder or you can use any brand -1 tsp /
-(Serbuk "Maggi Cukup Rasa" atau boleh guna apa - apa brand - 1 sdt)
3. Light soya sauce - 1/2 tbsp /
-(Kicap soya cair - 1/2 sdm)
4. White Pepper powder - 1/2 tsp /
-(Serbuk lada putih - 1/2 tsp)
πŸ‘‰Place B in a bowl and mix well. Marinate for 20 minutes.
*(Masukkan semua bahan B dalam sebuah mangkuk dan gaul rata. Perap selama 20 minit)

Ingredients C 
(Bahan - Bahan C)
1). Shallot(s) - 10 pieces, sliced /
*(Bawang merah - 10 biji, dihiris)
2). Garlic - 10 cloves, sliced /
*(Bawang Putih - 10 biji, dihiris)
3). Fresh Red Chili - 2 pieces, sliced /
*(Cili Merah Segar - 2 biji, dihiris)
πŸ‘‰ Combine ingredients C in a blender and blend coarsely.
*( Masukkan Bahan C dalam blender dan blend kasar).

Ingredients D
(Bahan - Bahan D)
1). Onion - 2 pieces, sliced/
*(Bawang besar - 2 biji, dihiris)
2). Fresh Green chilli - 2 pieces, sliced diagonally)
*(Cili Hijau Segar - 2 biji, dihiris menyerong).
3). Fresh Red Chili - 2 pieces, sliced diagonally /
*(Cili merah segar - 2 pieces, sliced menyerong).
4). Kaffir Lime leave - 3 pieces, centre spine removed, sliced * NOTE : Do not include the centre spine because  it's bitter /
*(Daun Limau Purut - 3 keping, buang urat tengah, dihiris * Note : Buang urat tengah daun limau purut sebab ianya berasa pahit)

Ingredients E
(Bahan - Bahan E)
1). Oyster sauce - 2 tbsp/
*(Sos tiram - 2 tbsp)
2). Chicken seasoning powder - 2 tsp)
*(Serbuk perasa ayam - 2 sdt)
3). Salt - to taste /
*(Garam - secukup Rasa)
----
Oil - sufficient amount /
*(Minyak - secukupnya)
Water - 1/2 cup /
*(Air - 1/2 cawan)
----
Methods
(Cara membuat)
1). Heat 6 tbsp[add oil if needed] of oil in a pan. Add the blended ingredient [Ing.C] and stir fry till crisp.
*(Panaskan 6 sdm[tambah minyak jika perlu] minyak dalam kuali dan tumis bahan kisar [bahan C] hingga garing).

2). Add in ingredients B, stir fry well for about 3 - 4 minutes over medium heat. Add in water and simmer over low heat till red colour oil is visible. 
*(Masukkan bahan B, kacau rata selama 3 - 4 minit dengan  api sederhana.  Masukkan air dan masak dengan api kecil hingga pecah minyak).

3). Once done, add ingredients D and stir fry briefly. Then add in ingredients E and stir well. 
*(Masukkan bahan D dan kacau sekejap. Kemudian masukkan bahan E dan kacau rata). 

4). Lastly, put in the 3/4 cooked eggplant(Ing. A), and stir well to combine over high heat for about 2-3 minutes. 
*(Akhir sekali, masukkan terong yang telah digoreng 3/4 masak[bahan A]. Kacau rata dengan api besar selama 2-3 minit).

5). Turn off the heat and it's ready to be served.
*(Padamkan api dan sedia untuk dihidang).
