We've so much leftover rice from yesterday's lunch so I decided to make Tom Yum Fried rice with it for last night's dinner which is my absolute favorite. If you've no idea of what to do with your leftover rice, don't throw it and here's an easy fried rice recipe for you. I used Tom Yum Powder for this recipe and I assure you that the taste was great. If you feel like to give this recipe a try, well, you may use Tom Yum Paste or Tom Yum Stock cubes if you don't have Tom Yum Powder at home.
Note : a). 1/2@0.5 tbsp of Tom Yum Paste for 700 grams of rice.
           b). 1(one) piece of Tom Yum Stock Cube for 700 grams of rice.

Ingredients for Tom Yum Fried Rice๐Ÿ‘‡;
Ingredients A
(Bahan - Bahan A)
1). Cooked Rice@Cold cooked Rice - 700 grams / 
*(Nasi Sejuk - 700 gram) 
2). Salt - to taste /
*(Garam - secukup rasa)

Ingredients B
(Bahan-bahan B)
1). Medium Size Prawns - 150grams, trimmed, deveined, rinsed and drained well /
*(Udang saiz sederhana - 150gram, trim, buang usus,  bersihkan dan tos)
2). Chicken Meat - 50 grams, sliced /
*(Daging ayam - 50 gram, dihiris)
3). Squid - 100 grams, sliced/
*(Sotong - 100 gram, dihiris)
4). Artificial Crab stick - 3 pieces, cut into segments /
*(Crab stick - 3 keping, dipotong)

Ingredients C
(Bahan-bahan C)
1). Garlic - 3 cloves, sliced /
*(Bawang putih - 3 ulas, dihiris)
2). Lemongrass - 1 stalks, white part only, thinly sliced /
*(Serai - 1 batang, bahagian putih sahaja, hiris nipis)
3). Galangal - 3 grams, thinly sliced /
*(Lengkuas - 3 grams, hiris nipis)
4). Red chilli - 2 pieces each, deseeded, sliced /
*(Cili merah - 2 biji, buang biji dan hiris)
-Combine ingredients C in a blender and blend till fine.
(Satukan bahan - bahan C dalam blender dan kisar halus)

Ingredients D
(Bahan-bahan D)
1). Broccoli - 20 grams, sliced /
*(Brokoli - 20 gram, dihiris)
2). Couli flower - 20 grams, sliced /
*(Bunga Kobis - 20 gram, dihiris)
3). Carrot - 20 grams, sliced /
*(Lobak Merah - 20 grams, dihiris)
4). Kaffir lime leaves - 2 pieces, centre spine removed, thinly sliced /
*(Daun limau purut - 2 keping, buang urat tengah, dihiris nipis)
5). Red and Green Chilli - 1 pieces each, sliced  /
*(Cili Merah dan Hijau segar - 1 biji setiap satu, dihiris)
6). Onion - 1 piece, cut into rings /
*(Bawang besar - 1 biji, potong bulat)

Ingredient E
(Bahan-bahan E)
1). Egg - 1 piece, beaten. Heat enough oil in a pan, add the beaten egg and scramble it, removed and set aside.
*(Telur - 1 biji, dipukul. Panaskan minyak secukupnya dan masukkan telur - kacau hingga hancur. Ketepikan)

* Oil - 4 tbsp, add more oil if needed /
*(Minyak - 4 sdm, tambah jika perlu)

Seasonings 
(Bahan-Bahan Perasa)
1). Tom Yum Paste - 0.5 tbsp "OR" Tom Yum Powder - 2 tbsp /
*(Pes Tom Yum - 0.5 Sdm "ATAU" Serbuk Tom Yum - 2 tbsp)
2). Light soya sauce - 0.5 tbsp /
*(Kicap soya cair -0.5 Sdm)
3). Anchovy stock powder - 0.5 tsp /
*(Serbuk perasa ikan bilis - 0.5 sdt)
4). Brown sugar or white sugar - 1/4 tsp /
*(Gula perang atau gula pasir - 1/4 sdt)

Method
(Cara Membuat)
1). Heat 4 tbsp(or sufficient amount) of cooking oil in a wok and saute ingredients C until crisp.
*(Panaskan 4 sdm(atau secukupnya) minyak di dalam kuali dan tumis bahan - bahan C sehingga garing).

2). Add in sliced Chicken meat and stir fry over medium heat till cooked. Then add in prawns, squid and artificial crab stick and saute for about 3 - 4 minutes over high heat.   
*(Masukkan daging ayam dan kacau dengan api sederhana hingga masak. Kemudian masukkan udang, sotong dan juga crab stick dan kacau rata dengan api besar selama 3 -4 minit )

3). Put in  Tom Yum paste "or" Tom Yam powder,  light soya sauce, Anchovy stock powder and brown sugar.  Stir fry briefly.
*( Masukkan pes Tom Yum "atau" Serbuk Tom Yum, kicap soya cair, serbuk perasa ikan bilis dan gula perang. Kacau seketika).

4). Add Ingredients D and stir fry over high heat for a while. Then stir in cold cooked rice and scrambled egg(Ing.E) with the mixture. Stir fry well over high heat until well combined.
*(Masukkan bahan-bahan D dan kacau sekejap. Kemudian masukkan nasi sejuk dan telur goreng(bahan E). Kacau rata dengan api besar hingga sebati).

5). Season to taste with salt and stir-fry quickly and evenly over high heat till done. Turn off the heat and dish out. Fried Rice is ready to be served.
*(Perasakan dengan garam dan kacau rata dengan api besar. Tutup api dan sedia untuk dihidangkan).
