Sharing my version of "Clams in coconut Broth" or in Malaysia,  we call it "Lala masak lemak". This dish is very simple and easy to make but it's very delicious. This is one of my favourite dishes and here's the recipe that I've modified or invented to suit my own taste. My whole family loved it and I am confident that you won't regret if you give it a try.

Ingredients for Clams in Coconut Broth;
Ingredients A
(Bahan - Bahan A)
1). Clams - 1.3 kg, rinsed and drained /
(Lala - 1.3 kg, cuci dan toskan)
2). Lemongrass - 3 stalks, bruised /
(Serai - 3 batang, ketuk)
3). Water - 1 litre /
(Air - 1 litre)
4). Thick Coconut milk - 200ml /
(Santan Pekat- 200ml)
5). Turmeric leaves - 2 stalks, thinly sliced /
(Daun kunyit - 2 keping, hiris nipis)
6). Tumeric powder - 1/2 tsp /
(Serbuk kunyit - 1/2 sdt)
7). Fenugreek - 1/2 tsp /
(Biji Halba - 1/2 sdt)
8). Oil - 3 tbsp * add more oil if needed/
(Minyak - 3 sdm * tambah minyak jika perlu)

Ingredients B
(Bahan - Bahan B)
1). Candlenut - 10 pcs /
(Buah keras - 10 biji)
2). Garlic - 8 cloves, sliced /
(Bawang Putih - 8 ulas, hiris)
3). Fresh Chillies - 3 pcs, sliced /
(Cili segar - 3 biji, hiris)
4). Shallots - 8 pcs, sliced /
(Bawang merah - 8 biji, hiris)
5). Dried Prawns - 1 tbsp /
(Udang kering - 1 sdm)
**Put all ingredients B in a blender and blend until fine.
*(Masukkan semua bahan B dalam satu blender dan kisar halus)

Seasonings/Bahan Perasa
1). Anchovy Stock powder - to taste /
(Serbuk perasa ikan bilis - ikut citarasa)
2). Brown sugar - to taste /
(Gula Perang - ikut citarasa)
3). Salt - to taste /
(Garam - Ikut citarasa)

(Cara membuatπŸ‘‡πŸ‘‡πŸ‘‡)
1). Heat 3 tbsp of oil in a wok and stir fry lemongrass until fragrant.
*(Panaskan minyak dalam kuali dan tumis serai hingga wangi).

2). Add in the blended ingredients(B) and stir well over low heat until the oil separates  from the blended ingredients and red colour oil is visible.
*(Masukkan bahan B dan kacau rata dengan api kecil sehingga pecah minyak).

3). Then add 1 litre of water, fenugreek, Anchovy stock powder, salt, brown sugar and turmeric powder. Stir briefly.
*(Masukkan air, biji halba, serbuk perasa ikan bilis, garam, gula perang dan juga serbuk kunyit dan kacau sekejap).

4). Bring to a boil over high heat. Then add coconut milk and turmeric leaves and stir briefly).
*(Masak dengan api besar dan selepas itu masukkan santan dan juga daun kunyit dan kacau sekejap).

5) Lastly add the claims and stir well over high heat for five(5) minutes.
*(Akhir sekali masukkan lala, gaul rata dan masak dengan api besar selama 5 minit.

6). Then cover the wok and simmer for another 5 minutes over medium heat and once done turn off the heat. Dish out and it's ready to be served.
*(Selepas itu, tutup kuali dan masak lagi dengan api sederhana selama 5 minit. Bila sudah masak sepenuhnya, padamkan api. Sedia untuk dihidang).
