Hello wonderful people. I'm Nora Liban from Malaysia. Welcome to Nora Liban's Kitchen @ Norma Bty Kitchen. Thank you so much for coming by and I really appreciate it. I made Fried Seabass fish with Tom Yum Sambal for today's lunch, paired with steamed white rice. I used my own homemade Tom Yum paste for the gravy or sambal and it was so tasty. Give it a try and I'm sure you'll love it. My Tom Yum Paste recipe is available in below link just in case you've missed what I shared earlier in my previous post but you can also use prepacked Tom Yum Paste from the supermarket if it is convenient to you. However, if you want to make a super delicious Tom Yum Soup, Tom Yum Sambal and etc. at home, I would say "HOME-MADE" Tom Yum Paste is still the best.

Ingredients for Fried Seabass Fish with Tom Yum Sambal;
Ingredients A
(Bahan-bahan A)
1). Seabass Fish or any type of fish - 900 grams, rinsed with salt and calamasi lime, then cut into segments /
*(Ikan Siakap atau apa - apa jenis ikan - 900 gram, dibersihkan dengan garam dan limau kasturi, kemudian dipotong kecil)
2). Anchovy stock - 2 tsp
*(Serbuk pcerasa ikan bilis - 2sdt)
3). Turmeric Powder - 2 tsp /
*(Serbuk kunyit - 2 sdt)
4). White Pepper Powder - 0.5 tsp /
*(Serbuk lada putih - 0.5 sdt)
Method for Aπ
(Cara Membuat untuk Aπ)
πCombine A in a bowl, mix well and set set aside for 15 minutes.
*(Masukkan semua bahan A dalam sebuah mangkuk, gaul rata dan ketepikan selama 15 minit).
πHeat 2 cups of oil in a pan and deep fry the marinated fish till golden brown. Removed and set aside.
*(Panaskan 2 cawan minyak dalam sebuah pan dan goreng ikan sehingga Kuning keemasan).

Ingredients B
(Bahan-bahan B)
1). Tom Yum Paste - 6 tbsp /
*(Pes Tom Yum - 6 Sdm)
2). Water - 300 ml /
*(Air - 300 ml)
3). Oyster sauce - 1 tbsp /
*(Sos Oyster - 1 Sdm)
4). Light soya sauce - 2 tsp /
*(Kicap soya cair - 2 tsp /
5). Sweet soya sauce - 1 tsp /
*(Kicap manis - 1 Sdt)
6). Brown sugar - 2 tsp or to taste /
*( Gula Perang - 2 sdt atau ikut citarasa)

Ingredients C
(Bahan-bahan C)
1). Shallots - 3 pieces, sliced /
*(Bawang merah - 3 biji, dihiris)
2). Garlic - 3 cloves, sliced /
*(Bawang putih - 3 ulas, dihiris)
3). Red Chilli - 2 pieces, deseeded /
*(Cili merah - 2 biji, buang biji)
4). Ginger - 5 grams /
*(Halia - 5 gram)
5). Lemongrass - 1 stalk, white part only, sliced /
*(Serai - 1 batang, bahagian putih sahaja, dihiris)
6). Kaffir lime leaves - 1 piece, center spine removed, sliced. Note: The center spine has bitter taste./
*(Daun limau purut - 1 keping, buang urat tengah, dihiris. Note : Urat tengah berasa pahit)
7). Anchovies - 2 tbsp /
*(Ikan bilis - 2 Sdm)
Put ingredients C in a blender and blend till smooth.
*(Masukkan bahan-bahan B dalam sebuah blender dan kisar halus)

Ingredients D
(Bahan-bahan D)
1). Kaffir lime leaves - 2 pieces /
*(Daun limau purut - 2 keping)
2). Onion - 1 piece, cut into rings /
*(Bawang besar - 1 biji, dipotong bulat)
3). Bird's eye chili - 4 pieces /
*(Cili padi - 4 biji)

-Oil for frying - sufficient amount /
*(Minyak - secukupnya)
-Salt - to taste /
*(Garam - Secukup rasa)
----
Method π
(Cara Membuat π)
1). Heat 5 tbsp (add oil if needed) of oil in a wok and stir fry ingredients C until crisp.
*(Panaskan 5 Sdm (tambah minyak jika perlu) minyak dalam kuali dan tumiskan Bahan-Bahan C hingga garing).
2).Then add in Tom Yum Paste (in Ing. B) and stir fry for a while over low heat.
*(Kemudian masukkan Pes Tom Yum dan kacau seketika dengan api kecil).
3). And then, stir in the rest of ingredients B and season to taste with salt. Simmer over low - medium heat stirring occasionally till the sauce thickens.
*(Masukkan semua bahan B yang lain dan perasakan dengan garam hingga secukup rasa. Masak dengan api kecil - sederhana dan kacau sekali-sekala hingga kuah pekat).
4). Once the sauce has thickened, put in ingredients D and stir briefly over low heat.
*(Bila kuah sudah pekat, masukkan bahan-bahan D dan kacau sekejap dengan api kecil).
5). Lastly, add in the fried fish (Ing. A) and stir well for about one to two minutes over low heat till all are evenly coated with the Tom Yum Sauce@Tom Yum Sambal.
*(Akhir sekali, masukkan ikan goreng (bahan A) dan kacau rata selama 2 hingga 3 minit dengan api kecil sehingga sebati).
6). Once done, turn off the heat. Dish out and it's ready to be served.
*(Bila sudah siap, matikan api dan sedia untuk dihidang).
