Grilled Lamb Shoulder🌺||🌺[Daging kambing Bakar]

I'm truly delighted to share with you my grilled Lamb Shoulder with Oyster sauce and Sarawak Black Pepper BBQ sauce marinade recipeI grew up in Miri, Northern part of Sarawak, East Malaysia and barbecue has always been part of our family's  culture. One of my favorite items to grill/barbecue for my family and friends is Lamb Shoulder. Mmmm...it tastes good.  You can either oven grilled the marinated meat or barbecue them over charcoal fire. Here are my ingredients and let's get started.

Ingredients A
(Bahan - Bahan A)
1). Lamb Shouder - 1kg, cleaned and drained /
* (Lamb Shoulder - 1kg, dibersihkan dan tos)

Ingredient B
(Bahan - Bahan B)
1). Oyster sauce - 8 tbsp /
*(Sos tiram - 8 sdm)
2). BBQ Sauce - 3 tbsp /
*( Sos BBQ - 3 tbsp)
3). Olive oil or vegetable oil - 3 tbsp /
*(Minyak zaitun atau minyak sayuran - 3 sdm)
4). Chili powder or Paprika powder - 2 tbsp /
*(Serbuk cili atau serbuk Paprika- 2 sdm)
5). Malaysian Palm Sugar or Brown Sugar - 1 tsp
*(Gula Melaka atau Gula Perang - 1 Sdt)
6). Black pepper powder - 2 tsp /
*(Serbuk lada hitam - 2 sdt)
7). Salt - to taste /
*(Garam - Ikut citarasa)
8). Garlic - 5 cloves, finely ground /
*(Bawang putih - 5 ulas, ditumbuk halus)
9). Maggi Seasoning Powder - 1 tsp /
*(Maggi Cukup Rasa - 1 sdt)
10). Tamarind Paste - 1/2 tsp*optional -tamarind is a perfect meat tenderizer/
*(Pes Asam Jawa - 1/2 sdt*optional - saya letak supaya daging tak liat)

Ingredients C - Glazing Sauce
(Bahan- Bahan C - Sos glazing)
1). Oyster sauce - 1 tbsp /
*(Sos tiram - 1 sdm)
2). BBQ Sauce - 2 tbsp /
*(Sos BBQ - 2 sdm)
3). Chilli powder or paprika powder - 1/2(half) tsp /
*(Serbuk Cili atau serbuk paprika - 1/2 sdt)
4. Olive Oil or Vegetable oil - 3 tbsp /
*(Minyak Zaitun atau Minyak Sayur - 3 Sdm)
5).Drinking Water - 4 tbsp /
*(Air kosong - 4 Sdm)
👉Combine Ingredients C in a pan and mix well. Stir over low heat until the sauce thickens. Once the sauce has thickened turn off the heat and set aside.
**(Campurkan semua bahan - bahan C dan kacau dengan api kecil hingga separuh pekat dan ketepikan).

Method
(Cara membuat)
1). Place Lamb Shoulder (ingredient A) and ingredients B in a bowl and mix well. Leave to marinate in the refrigerator for 6 hours.
*(Satukan daging kambing(bahan A) dan bahan B. Gaul rata dan perap selama 6 jam dalam peti sejuk).

2). Remove the marinated meat from the refrigerator and let it sit in room temperature for around 30 minutes. Line the roasting pan with aluminum foil for fast and easy clean up.

*(Keluarkan daging dari peti sejuk dan biarkan berada dalam suhu bilik selama 30 minit. Lapikkan dulang pembakar dengan aluminum foil). 
 
3). Then transfer the marinated lamb Shoulder into the lined roasting pan.
*(Masukkan daging yang telah diperap dalam dulang pembakar yang telah dilapik dengan aluminum foil.

4). Preheat oven to 250°C. When the oven is up to the temperature,  grill the marinated lamb shoulder at 250°C for 25 minutes. 👉Note : I used grilling and broiling methods.
*(Panaskan oven dengan suhu 250°C dan pangang daging pada suhu 250°C selama 25 minit. 👉Nota:Saya guna oven dengan alat pemanggang bawah dan atas). 

5). Then flip it and continue to grilled for another 10 minutes at 250°C.
**(Selepas itu balikkan daging dan bakar lagi selama 10 minit pada suhu 250C).

6). Once done, glaze the grilled Lamb Shoulder with the glazing sauce(Ingredients C) before serving.
**(Bila daging sudah masak sepenuhnya, glaze/sadur dengan glazing sauce (bahan C) sebelum hidang)
