Prawn Rendang Recipe ๐ŸŒบ||๐ŸŒบ[ Resepi Rendang Udang]

If you've never heard of the word "Rendang", well,  Rendang is listed in Malaysia's top 20 dishes, namely Chicken Rendang, Beef Rendang, Mutton Rendang, Lamb Rendang and etc. Being a Malaysian, I love Rendang and today's recipe that I'm about to share with you is my version of "Prawn Rendang". I made this dish last night as requested by my son. We served it with Nasi lemak @ Malaysian Coconut Rice and Steamed Sweet Corn.  Here are the ingredients;

Ingredients A 
(Bahan - Bahan A)
1). Medium or Large Prawns - 1.2kg, trimmed, deveined and rinsed/
-(Udang - 1.2kg, buang usus udang, cuci dan tos)
2). Turmeric powder - 3 tsp /
-(Serbuk kunyit -3 sdt)
3). Salt - 3 tsp /
-(Garam - 3 sdt)
4). Anchovy seasoning powder - 2 tsp/
-(Serbuk perasa ikan bilis - 2 sdt)
Method for A
(Cara membuat untuk A)
1). Combine A in a bowl, mix well and marinate for 15 minutes.
-(Campurkan bahan A, gaul rata dan perap selama 15 minit).
2). Heat sufficient oil in a wok. Deep-fry the marinated prawns for 3 minutes. Drain and set aside.
-(Panaskan minyak secukupnya. Goreng udang selama 3 minit. Angkat dan toskan).

Ingredients B - Finely blended
(Bahan -Bahan B - Kisar halus)
1. Garlic - 10 Cloves, sliced/
-(Bawang Putih - 10 ulas, dihiris)
2. Shallot(s) - 15pcs@130grams, sliced/
-(Bawang merah - 15 biji@130grams, dihiris)
3. Dried Chillies - 60grams, soaked in hot water and drained. Get the chillies deseeded if you want your rendang to be less spicy /
-(Cili kering - 60gram, rendam dalam air panas dan toskan. Buang biji cili kalau tak nak terlalu pedas)
4. Galangal - 30g, sliced/
-(Lengkuas - 30g, dihiris)
5. Lemongrass - 2 stalks(white part only), sliced /
-(Serai - 2 btg - bahagian putih sahaja, dihiris)
6. Candlenut - 6 pcs /
-(Buah keras - 6 biji)
7). Ginger - 1 inch, sliced /
(Halia - 1 inci, dihiris)
8). Chilli powder - 1 tbsp /
-(Serbuk Cili - 1 sdm)
9). Dried Prawns - 10 grams /
-(Udang Kering - 10 gram)
*Combine ingredients B in a blender and blend until fine.
(Masukkan bahan B dalam blender dan kisar halus).

Ingredients C
(Bahan - Bahan C
1.Coconut Milk - 400ml /
-(Santan - 400ml)
2. Instant blended toasted grated coconut - 1tbsp /
-(Kerisik kelapa segera - 1 sdm)
3.Anchovy Stock  - 2 cubes /
-(Pati ikan bilis - 2 kube)
4.Salt - to taste/
-(Garam - ikut citarasa)
5.Palm Sugar - 5 tsp or to taste/
-(Gula Melaka - 5 sdt atau ikut citarasa)
6.Tamarind paste - 1 tsp/
-(Pes asam jawa - 1 sdt)
7. Water - 500ml or add more water if needed/
-(Air - 500ml atau tambah air jika perlu)

Ingredients D 
(Bahan-bahan D)
1. Kaffir lime leaves -4 pcs /
-(Daun limau purut - 4 keping)
2. Turmeric Leaves - 1 stalks, thinly sliced@julienned /
-(Daun kunyit - 1 keping, hiris halus) 
----
Cooking oil - 8 tbsp or to taste
-(Minyak masak - 8 sdm @ ikut citarasa)
----
Cooking Method
(Cara-cara membuat)

1. Heat 8 tbsp of oil(add more oil if needed) and stir fry the blended ingredients (Ingredients B) over low heat until the oil rises to the top.
**(Panaskan 8 sdm minyak(tambah minyak bila perlu), tumiskan bahan kisar(B) dengan api kecil hingga pecah minyak).

2. Add in  coconut milk and the rest of ingredients C.  Stir well.
**(Tambahkan santan kelapa dan juga bahan - bahan C yang lain. Kacau rata.

3. Continue cooking over low - medium heat. Stir occasionally  till the gravy thickens. 
**(Masakkan dengan api kecil dan sederhana dan kacau sekali sekala sehingga kuah menjadi pekat).

4. Once the gravy has thickened, add 2 pcs of Kaffir lime leaves(C) and half (1/2) of the sliced turmeric leaves(C). Mix well.
**(Bila kuah sudah pekat, masukkan 2 keping daun limau purut dan separuh hirisan daun kunyit. Kacau rata).

5. Add in the fried prawns(ingredients A) and  stir well. Cover and cook over medium heat for 5 minutes then turn off the heat immediately.
**(Masukkan udang goreng dan kacau rata . Tutup kuali dan masak selama 5 minit. Padamkan api).

6. Garnish the Prawn Rendang with the remaining Turmeric Leaves and Kaffir lime leaves before serving.
**(Hiaskan Rendang Udang dengan baki hirisan daun kunyit dan baki daun limau purut sebelum hidang).
