Hi! everyone. This is Nora Liban. Thanks so much for coming by and I really do appreciate it. I'm very delighted to share with you how I cooked Hot and Spicy Chicken Sambal with simple ingredients available in almost every home. I got this recipe from 'Mdm. Vasandra Davi Ramalingam' (I call her Auntie Vasandra) who is a Malaysian Indian, born in Kuala Lumpur and now residing in Subang Jaya, Selangor. Auntie Vasandra is definitely an expert in this area and she's my Malaysian Indian cuisine mentor. Honestly, I'm not a chef nor even a trained cook by profession but my passion is cooking, so there will be more great recipes for me in the future. I've been posting recipes here since 5th November 2020 and I hereby assure you that I'll be updating my blog from time to time with my own recipes @ my own versions or a modified version, therefore stay tuned with Nora Liban's Kitchen. The dish that I'm about to share with you is one of my top 10 favourite dishes, in no particular order, so this is exactly how Auntie Vasandra prepared it.

(Bahan-Bahan A)
1. Whole Chicken, chopped into 12 pcs - 1.3kg /
(Seekor Ayam, potong 12 - 1.3 kg).

(Bahan - Bahan B)
1. Onion - 4 pcs, thinly sliced /
(Bawang besar - 4 biji, hiris nipis)
2. Tomato - 2 pcs (150g), chopped /
(Tomato - 2 biji(150g), hiris)
3. Lemongrass - 3 stalks, bruised /
(Serai - 3 batang)
4. Oil - 4 tbsp /
(Minyak masak - 4 tbsp)

Ingredients C -finely blended
(Bahan - Bahan C - kisar halus)
1. Dried Chilli - 30 pcs(40grams) or 6 tbsp of Chilli powder [today I use chilli powder as I don't have dried chillies at home].
(Chilli kering - 30 biji(40gram) atau 6 sdm serbuk cili - hari ini saya guna serbuk cili sebab saya kehabisan stock cili kering).
2. Garlic - 6 cloves, chopped /
( Bawang Putih - 6 ulas)
3. Shallot(s) - 6 pcs, sliced /
(Bawang merah - 6 biji)

**Place Ingredients C in a blender and blend ingredients until fine.
(Masukkan bahan - Bahan C dalam satu blender dan kisar halus).

(Bahan - Bahan D)
1. Salt - to taste
(Garam - ikut citarasa)
2. Chicken stock - 1 cube /
(Stok Ayam - 1 kube)
3. Brown sugar - to taste
(Gula perang - ikut citarasa)

Method
(Cara membuat 👇👇👇)
1. Heat 4 tbsp of oil in a wok.
**(Panaskan 4 sdm minyak dalam kuali).
2. Stir fry the sliced onion and lemongrass until fragrant.
**(Tumis bawang besar dan serai hingga wangi).
3. Add chopped tomatoes and cook for about 5 minutes over low heat or simmer until tomatoes and onions are beginning to break up.
**(Masukkan tomato dan masak dengan api kecil sehingga tomato dan bawang mula kelihatan hancur).
4. Then add blended ingredients(C) and stir over low heat until the oil separates.
**(Masukkan bahan kisar(C), gaul dengan api kecil hingga pecah Minyak).
5. When the oil has separated, add the chicken pieces and mix well. Simmer over low to medium heat until the chicken excretes liquid.
**(Masukkan Ayam dan gaul rata. Masak dengan api kecil dan sederhana hingga ayam mengeluarkan cecair).
6. Add water barely to cover the chicken followed by Chicken cube, salt and sugar. Mix well.
**(Masukkan air hingga cukup menutupi Ayam sahaja. Tambah kube Ayam, garam dan gula perang. Gaul rata).
7. Simmer over low to medium heat and stir occasionally until the gravy thickens.
**(Masak dengan api kecil dan sederhana dan gaul sekali sekala hingga kuah pekat).
8. Once the gravy has thickened, turn off the heat. Ready to be served!!l.
**(Bila kuah dah pekat, padamkan api dan sedia untuk dihidang).
