Sharing my simple dish for today's lunch. I made grilled/baked Chicken, marinated in Satay Paste and for this recipe I used bone-in Chicken thighs with skin-on. Chicken thighs are relatively thick, therefore you need to score each thigh few times before you marinate them to absorb flavor. It would be much better if you keep them to marinate in the fridge overnight. They are simple to make and came out moist and tender. The baked chicken is crispy on the outside and juicy on the inside and  you can pair it with anything you want. This is my own recipe and let's get right into it.

Ingredients A
(Bahan - Bahan A)
1). Chicken thigh - 4/5 pieces@1.2kg, cleaned and drained /score each chicken thighs few times before marinating it.
**(Paha ayam - 4/5 ketul@1.2kg, bersihkan dan kelarkan ayam sebelum diperap)
2). Brown sugar or palm sugar - 6 tbsp or to taste /
**(Gula perang atau gula melaka - 6 sdm atau ikut citarasa).
3). Salt - to taste /
**(Garam - ikut citarasa)
4). Chicken seasoning powder - 4 tsp /
**(Serbuk perasa ayam - 4 sdt)
5). Tamarind paste - 2 tsp /
**(Pes asam jawa - 2 sdt)
6). Oil - 2 tbsp /
**(Minyak - 2 sdm)

Ingredients B - Finely blended ๐Ÿ‘‰My version of Satay paste.
(Bahan - Bahan B - Kisar halus ๐Ÿ‘‰Pes satay versi saya)
1). Galangal - 60 grams, sliced /
**(Lengkuas - 60 gram, hiris)
2). Ginger - 20 grams, sliced /
**(Halia - 20 gram, hiris)
3). Lemongrass - 4 stalks, white inner part only@tender section of the bulb, sliced /
**(Serai - 4 batang, bahagian putih sahaja, hiris)
4). Coriander powder - 2 tbsp /
**(Serbuk ketumbar - 2 sdm)
5). Cumin powder - 2 tsp /
**(serbuk jintan putih - 2 sdt)
6). Chilli Powder or Paprika powder - 2 tbsp - add more if needed. This time I used chilli powder /
**(Serbuk Cili or Serbuk Paprika - 2 sdm, tambah jika perlu, kali ini saya guna serbuk cili )
7). Turmeric Powder - 4 tsp /
**(Serbuk Kunyit - 4 sdt)
8). Shallot(s) - 6 pcs, sliced /
**(Bawang Merah - 6 biji, hiris)
9). Garlic - 6 cloves, sliced /
**(Bawang Putih - 6 ulas, hiris)
10). Fennel powder - 1 tbsp /
**(Serbuk jintan manis - 1 sdm /
11). Water - 200ml - add more water if needed /
**(Air - 200 ml - tambah air jika perlu)
Put all ingredients B in a blender and blend until fine.
**(Masukkan semua bahan B dalam blender dan kisar halus)

Ingredients C
(Bahan C)
1). Oil  - 2 -3 tbsp, for glazing/
**(Minyak - 2 - 3 sdm, untuk menyadur)

Method ๐Ÿ‘‡๐Ÿ‘‡๐Ÿ‘‡
(Cara membuat ๐Ÿ‘‡๐Ÿ‘‡๐Ÿ‘‡)

1). Combine blended ingredients(B) with ingredients A(Chicken and the rest of the ingredients). Mix well and keep to marinate in the fridge for at least 8 hours or overnight.
**(Satukan bahan kisar(B) dan bahan A(ayam dan bahan - bahan lain). Gaul rata dan perap selama 8 jam atau satu malam dalam peti sejuk).

2). Heat 2 tbsp of oil(or just enough to lubricate the pan) in a non stick pan and pan grill the marinated chicken thighs over low heat, spooning the sauce over the chicken to coat. Turn the chicken occasionally and grill it for 15 minutes or until it is 1/4(one quarter) cooked and the sauce has thickened. Turn off the heat.
**(Panaskan 2 sdm minyak dalam non stick pan dan masak ayam yang telah diperap dengan api kecil. Balikkan ayam sekali- sekala sehingga  ayam 1/4(satu per empat) masak atau lebih kurang dalam 15 minit dan kuah menjadi pekat. Padamkan api.

3). Preheat the oven. Grill the chicken for 20 minutes at 220°C. 
**(Panaskan oven dan bakar ayam tadi selama 20 minit pada suhu 220°C).

4). After 20 minutes, remove it from the oven and  brush oil (C) onto the meat with a heat resistant barbecue/pastry brush. Then flip it and continue to grill for another 20 minutes.
**( Selepas 20 minutes, keluarkan ayam dari dalam oven, sadur dengan minyak (C) dan balikkan Ayam.  Bakar ayam lagi selama 20 minit).

5). 6). Once done, removed the grilled chicken and serve hot with your favorite dipping sauce (C).
**(Bila sudah masak, keluarkan ayam dari oven dan hidang dengan sos pencicah kegemaran masing - masing).
