Hello wonderful people. Welcome to Nora Liban's Kitchen @ Norma Bty Kitchen. Thank you so much for coming by and I really appreciate it. If you are here for the first time, for your info, I've been posting recipes in my blog since 5th November 2020. My passion is cooking and I believe that everything I do with passion will make me feel fulfilled and satisfied/happy. This is my version of Turmeric Chicken sambal that I've modified to suit my own taste. You might be wondering what is "Sambal". Okay, in Malaysia, "Sambal" simply means "Hot Relish" made with Chillies and Vegetables. In the past, I normally add Belacan(Prawn Paste) in my turmeric Sambal, but for this batch, I used dried prawns instead of Prawn Paste(Belacan) and the taste is equally good@tasty. You can pair it with anything including steamed rice, fried rice, Nasi Lemak and etc. Here are the ingredients;

Ingredients A
(Bahan - Bahan A)
1). Whole Chicken - 1.4kg, chopped into 16 pcs cleaned and drained /
-(Ayam - 1.4 kg, potong 16, dibersih dan tos).
2).Salt - 4 tsp /
-(Garam - 4 sdt)
3). Chicken seasoning powder - 2 tsp /
-(Serbuk perasa ayam - 2 sdt)
4). Turmeric Powder - 3 tsp /
-(Serbuk kunyit - 3 sdt)
Method for A๐
(Cara membuat untuk A)
1). Combine A in a bowl and mix well. Leave to marinate in the fridge for 2 hours.
-(masukkan semua bahan A dalam mangkuk dan gaul rata. Perap selama 2 jam dalam peti sejuk).
2). Heat sufficient oil in a wok. Deep-fry the marinated chicken until half cooked. Drain and set aside.
-(Panaskan minyak secukupnya. Goreng ayam yang telah diperap hingga separuh masak. Angkat dan toskan).

Ingredients B - finely blended
(Bahan-Bahan B - kisar halus)
1). Shallot(s) - 15pcs@150gram, sliced /
-(Bawang merah - 15biji@150gram, hiris)
2). Garlic - 10cloves, sliced /
-(Bawang Putih - 10ulas, hiris)
3). Fresh Turmeric - 25grams, sliced /
-(Kunyit hidup - 25 gram, dihiris)
4). Lemongrass - 4 stalks - white part only, sliced /
-(Serai - 4 batang - bahagian putih sahaja, dihiris)
5). Dried chillies - 15 grams, cut into segments, soaked in hot water and drained - get the chillies deseeded if you want a less spicy Sambal/
-(Cili kering - 15 gram, rendam dalam air panas dan tos - buang biji cili kalau nak kurang pedas)
6). Bird's eye chillies - 20 pcs /
-(Cili padi - 20 biji)
7). Ginger - 2 cm @ 5 grams, sliced /
-(Halia - 2 cm @ 5 gram, dihiris)
8). Prawn Paste - 5 grams....๐dried prawns also can be used as substitute - 10 grams/
-(Belacan - 5 gram...๐udang kering juga boleh digunakan kalau tak ada belacan - 10 gram)

*Combine ingredients B in a blender and blend until fine.
-( Masukkan bahan - bahan B dalam blender dan kisar halus).

Ingredients C
(Bahan-Bahan C)
1. Salt - to taste /
-(Garam - ikut citarasa)
2. Chicken Stock cube - 3 cubes /
-(Kube Pati ayam - 3 kube))
3. Brown Sugar or Malaysian Palm Sugar - 4 tsp or to taste /
-(Gula Perang atau Gula Melaka - 4 sdt atau ikut citarasa)
4. Tamarind Paste - 1/2(half) tsp /
-(Pes asam jawa - 1/2(setengah) sdt)
5). Water - 400ml or add more water if needed /
(Air - 400ml atau tambah air jika perlu)
6). Kaffir lime leaves - 3 pcs, remove the thick and tough centre spine /
-(Daun limau purut - 3 keping, buang urat tengah)
7). Fish sauce - 1 tbsp /
-(Sauce ikan - 1 sdm)

Ingredients D
( Bahan - Bahan D)
1). Kaffir lime leaves - 2 pcs, centre spine removed and julienned/thinly sliced /
-(Daun limau purut - 2 keping, buang urat tengah dan hiris halus)
2). Onion - 1 pc, cut into rings /
-(Bawang besar - 1 biji, potong bulat)
3). Lemongrass - 2 stalks, bruised /
-(Serai - 2 batang, diketuk)
4). Cooking oil - 10 tbsp or add more if needed /
-(Minyak masak - 10 sdm atau tambah jika perlu)

Method๐
(Cara membuat๐).
1). Heat 10 tbsp(add more oil if needed) of cooking oil in a wok. Stir fry the lemon grass (in D) and the blended ingredients (Ingredients B) over low heat until the oil rises to the top.
-(Panaskan 10 sdm minyak(tambah jika perlu), tumiskan bahan kisar(B) dengan api kecil. Kacau rata hingga pecah minyak).
2). Add in water followed by the rest of ingredients C and bring to boil over high heat.
-(Masukkan air secukupnya dan juga bahan C yang lain. Masak dengan api besar sehingga mendidih).
3). Then add the fried chicken pieces (Ing. A) and stir well. Cover and cook for a while over medium heat.
-(Masukkan Ayam yang telah digoreng dan kacau rata. Tutup dan masak sekejap dengan api sederhana).
4). Stir occasionally and continue cooking over low - medium heat till the gravy thickens. Once the gravy has thickened, add the onion slices(in D) and stir briefly then turn off the heat.
-(Kacau sekali - sekala dan masak ayam dengan api kecil - sederhana sehingga kuah menjadi pekat. Bila kuah sudah pekat, masukkan hirisan bawang besar(dalam D), kacau sekejap dan padamkan api).
5). Garnish the cooked Turmeric Chicken Sambal with the julienned Kaffir lime leaves(in D) before serving.
-(Hiaskan Sambal Ayam Kunyit berlado dengan hirisan daun limau purut(in D) sebelum hidang).
