In Malaysia, we call this dish "Ayam Percik", believed to be originated from the State of Kelantan, Northern Part of West Malaysia. Okay, for those of you who are not from Malaysia, let me explain to you briefly what's the meaning of "Ayam Percik"... it means "Splash Chicken"...in Malay language👉👉Ayam = Chicken and 👉👉Percik = Splash. It's a type of grilled chicken slathered or basted with spiced coconut milk sauce before grilling. I got this recipe from a friend of mine but I've modified it to suit my own taste or in other words, ...."this is my style" @ "cara saya" @ "cara Nora Liban"....🤣🤣hahahahahha... oopssðŸ¤ðŸ¤. Normally, I use bone-in Chicken thighs to make Ayam Percik but this time I use Chicken Wings instead ....ermmmm👌👌👌...I love it and I'm sure you'll love it too😊✌️✌️. For your info, I used grilling and broiling methods for this recipe but you can also roast your Chicken over charcoal heat. Here are the ingredients.

Ingredients A
(Bahan - Bahan A)
1. Chicken wings - 12 pcs, rinsed and drained /
-(Kepak Ayam - 12 keping, bilas dan tos)
2. Chicken seasoning powder - 4 tsp /
-(Serbuk perasa Ayam - 4 sdt)
3). Salt - 3 tsp /
-(Garam - 3 sdt)
*Combine A in a bowl and mix well.
-(Masukkan bahan - Bahan A dalam satu mangkuk dan gaul rata)

Ingredients B
(Bahan - Bahan B)
1). Lemongrass - 2 stalks, bruised /
-(Serai - 2 batang, diketuk)
2). Thick coconut milk - 400 ml /
-(Santan Pekat - 400 ml)
3). Oil - 8 tbsp@add more oil if needed /
-(Minyak - 8 sdm@tambah minyak jika perlu)
4). Water - 1 litre @ add water if needed /
-(Air - 1 liter @ tambah air jika perlu)

Ingredients C - Blended Ingredients
(Bahan - Bahan C - Kisar Halus)
1). Shallots - 16 pcs@160 grams, sliced /
-(Bawang merah - 16 biji@160 gram, hiris)
2). Garlic - 6 cloves, sliced /
-(Bawang Putih - 6 ulas, dihiris)
3). Ginger - 5 grams, sliced /
-(Halia - 5 gram, dihiris)
4). Galangal - 30 grams, sliced /
-(Lengkuas - 30 gram, dihiris)
5). Fresh Turmeric - 5 grams, sliced /
-(Kunyit segar - 5 gram, dihiris)
6). Lemongrass - 4 stalks, white part only, sliced /
-(Serai - 4 batang, bahagian putih sahaja, dihiris)
7). Chilli powder - 4 tbsp /
-(Serbuk cili - 4 sdm)
8). Corriander powder - 1/2 tbsp /
-(Serbuk Ketumbar - 1/2 sdm)
9). Fennel powder - 1/2 tbsp)
-(Serbuk Jintan manis - 1/2 sdm)
10). Cumin powder - 1/2 tbsp /
-(Serbuk Jintan Putih - 1/2 sdm)
*Put ingredients C in a blender and blend until fine.
-(Masukkan bahan - bahan C dalam belnder dan kisar halus)

Ingredients D
(Bahan - Bahan D)
1). Salt - to taste /
-(Garam - ikut citarasa)
2). Brown Sugar or Malaysian Palm Sugar - 6 tbsp or to taste)
-(Gula perang or Gula Melaka - 6 sdm atau ikut citarasa)
3). Chicken Stock - 2 cubes /
-(Stock Ayam - 2 kube)
4). Tamarind Paste - 1/2 tsp /
-(Pes Asam Jawa - 1/2 sdt)

Ingredients E - Finely blended
(Bahan - Bahan E - Kisar Halus)
1). Roasted Groundnut - 60 grams /

Method
(Cara Membuat)
1). Heat 8 tbsp of oil(add if needed) in a wok and stir fry the lemongrass until fragrant.
-(Panaskan 8 sdm minyak(tambah jika perlu) dalam kuali dan tumis serai hingga wangi).
2). Add the blended ingredients(Ing.C) and stir well until the oil rises to the top.
-(Masukkan bahan kisar(Bahan C) dan kacau sehingga pecah minyak).
3). Add 1 litre of water, 400ml of thick coconut milk, Ingredients D and Ingredients E. Stir briefly, cover and bring the mixture to boil over medium heat. Stir occasionally until the sauce thickens.
-(Masukkan 1 liter air, 400ml Santan pekat, bahan - bahan D dan juga bahan - bahan E. Kacau sekejap, tutup kuali dan masak dengan api sederhana. Kacau sekali-sekala sehingga sos pekat).
4). Once the sauce has thickened, add in the chicken wings(Ingredients A), stir well and simmer over medium heat for about 6 minutes or until the chicken is half cooked. Then turn off the heat.
-(Bila kuah sudah pekat, masukkan kepak ayam, kacau rata dan masak dengan api sederhana selama 6 minit atau sehingga separuh masak. Padamkan api.
5). Transfer the half cooked chicken wings into a bowl and pour some of the percik sauce over the chicken and leave it to marinate for two(2) hours.
-(Pindahkan kepak ayam ke dalam sebuah mangkuk dan tuang sedikit sos percik ke atas kepak ayam dan perap selama dua(2) jam).
6). Line the roasting pan with aluminum foil for fast and easy clean up.
-(Lapikkan dulang pembakar dengan aluminum foil).
7). Arrange the marinated chicken wings on the lined baking tray and spread the remaining marinade on the chicken wings.
-(Susun kepak ayam yang telah diperap di atas dulang pembakar dan tuang baki sos perapan ke atas kepak ayam).
8). Preheat oven to 190°C. When the oven is up to the temperature, grill the chicken wings at 190°C for 30 minutes or until the chicken wings are golden brown. 👉Note : I used grilling and broiling methods.
-(Panaskan oven dengan suhu 190°C dan pangang sayap ayam pada suhu 190°C selama 30 minit atau sehingga sayap ayam berwarna kuning keemasan.👉Nota:Saya guna oven dengan alat pemanggang bawah dan atas).
9). Remove the chicken from the oven and glaze it with some percik sauce and allow the grilled chicken to rest for 10 minutes before serving in order for the moisture from the chicken to distribute evenly and seal itself.
-(Keluarkan ayam dari dalam oven, sadur/glaze dengan sos percik dan rehatkan ayam bakar selama 10 minit sebelum hidang supaya ayam kekal lembab di dalam).
10). Serve the grilled chicken with the Percik sauce.
-(Hidangkan kepak ayam bakar bersama sos percik).
