Hi there! Today, I would like to share with you my version of Steamed Salmon with Ginger and Coriander Stems. I made this dish yesterday and it goes well with Bird's Eye Chili dipping sauce. The taste was amazing and here are the ingredients;

Ingredients A

(Bahan - Bahan A)

1). Salmon - 3 slices @ 360grams, cleaned /

*(Ikan salmon - 3 hiris @ 360gram, dibersihkan)

Ingredients B

(Bahan - Bahan B)

1). Light soya sauce or fish sauce - 2 tbsp /

*(Kicap soya cair atau sos ikan - 2 sdm)

2). Anchovy seasoning powder - 1 tsp /

*(Serbuk pati ikan bilis - 1 sdt)

3). Salt - to taste /

*(Garam - ikut citarasa /

4). Brown Sugar - 1/2 tsp /

*(Gula Perang - 1/2 sdt)

5). Oyster sauce - 2 tsp /

*(Sos tiram - 2 sdt)

6). Sesame oil - 2 tsp /

*(Minyak bijan - 2 sdt)

Ingredients C

(Bahan - Bahan C)

1). Bird's eyes chili - 5 pcs or adjust to your liking, deseeded and finely chopped /

*(Cili Padi - 5 biji, atau kurangkan, jika tak nak terlalu pedas -  dicincang halus)

2). Garlic - 3 cloves, diced /

*(Bawang Putih - 3 ulas, potong dadu)

3). Coriander stem - 1 stalk, cleaned and sliced/

*(Tangkai Ketumbar - 1 tangkai, dihiris)

4). Ginger - 3 cm, diced /

*(Halia - 3 cm, potong dadu)

Ingredients D

(Bahan - Bahan D)

1). Lime - 2 pcs, juice squeezed /

*(Limau nipis - 2 biji, jus diperah)

----

Ingredients E - Bird's Eye Chili Dipping sauce

(Bahan - Bahan E - Sos Pencicah Cili Padi)

1). Bird's eye chili (Red & Green) - 10 pcs, chopped/

*(Cili padi (Merah & Hijau) - 10 biji, dicincang)

2). Garlic - 6 cloves, diced/

*(Bawang Putih - 6 ulas, potong dadu)

3). Lime - 8 pcs, juice squeezed/

*(Limau Nipis - 8 biji, jus diperah)

4). Galangal - 1/2 inch, diced/

*(Lengkuas - 1/2 inci, potong dadu)

5). Brown sugar - 1 tbsp/

*(Gula Perang - 1 tbsp)

6). Light soya sauce or fish sauce - 6 tbsp/

*(Kicap soya cair atau sos ikan - 6 tbsp)

7). Dark Soya sauce - 3 tbsp/

*(Kicap pekat - 3 tbsp)

8). Drinking water - 2 tbsp/

*(Air minum - 2 sdm)

👉Combine Ingredients E in a bowl, mix well and set aside.

*(Campurkan semua bahan E dalam satu mangkuk, gaul rata dan ketepikan)

Method

(Cara membuat)

1). Combine the fish(salmon) with ingredients B, mix well and set aside for half an hour. 

*(Campurkan ikan(Salmon) dengan bahan-bahan B dan gaul rata. Perap selama setengah jam.

2). Bring steaming water to a boil. 

*(Didihkan air kukusan).

3). Place the fish in a steaming tray and pour the lime juice (ingredients D) over the fish. 

*(Masukkan ikan di dalam dulang pengukus dan tuangkan jus limau nipis (bahan D) di atas ikan).

4). Then scatter half(1/2) of ingredients C on top of the fish(salmon) evenly.

*(Taburkan separuh(1/2) bahan - bahan C di atas ikan(salmon).

5). Put fish in the steamer and steam for 15 minutes or until the fish is cooked through over high heat. 

*(Letakkan ikan di dalam kukusan dan kukus selama 15 minit atau sehingga ikan masak dengan api kuat).

6). Remove the steamed fish from the steamer and garnish it with the remaining  ingredients C before serving. Serve hot with the bird's eye chili dipping sauce/ ingredients E.

*(Angkat dan hias ikan dengan baki bahan C sebelum hidang. Hidang bersama dengan sos pencicah cili padi/bahan E).
