[BELOW RECIPE IS WITH BAHASA MALAYSIA TRANSLATIONS]
I just wanted to share with you guys what I cooked for dinner last night, that is my version of Roasted Black Pepper Chicken @ Broiled Black Pepper Chicken. For your info, I used grilling and broiling methods for this recipe. Here's the recipe and let's get started.

Ingredients A
(Bahan-Bahan A)
1). Whole chicken - 1.1kg, rinsed and pat dry with paper towels, inside and out/
(Ayam - 1 ekor, dibersihkan dan keringkan dengan tisu dapur, dalam dan luar)

Ingredients B
(Bahan - Bahan B)
1). BBQ sauce, any brand will do - 6 tbsp/
(Sos BBQ, boleh guna semua jenama - 6 Sdm)
2). Sweet soya sauce - 2 tbsp/
(kicap Manis - 2 sdm)
3). Brown Sugar - 1 tbsp/
(Gula perang - 1 sdm)
4). Coarsely ground black pepper - 1.5 tbsp/
(Lada Hitam yang ditumbuk kasar - 1.5 sdm)
5). Chicken seasoning powder - 3 tsp/
(Serbuk pati ayam - 3 sdt)
6). Salt - to taste /
(Garam - ikut citarasa)
7). Chilli powder - 1.5 tbsp /
(Serbuk cili - 1.5 sdm)
8). Cumin powder - 3 tsp/
(Serbuk jintan putih - 3 sdt)
9). Olive oil/Vegetable oil - 2 tbsp/
(Minyak zaitun/Minyak sayur - 2 sdm)

Ingredients C - Blended ingredients
(Bahan - Bahan C)
1). Shallot(s) - 8 pcs/
(Bawang merah - 8 biji)
2). Garlic - 5 cloves
(Bawang putih - 5 ulas)
3). Lemongrass - 1 stalk, thinly sliced/
(Serai - 1 batang, hiris halus)
4). Galangal - 4 cm @ 10grams/
(Lengkuas - 4 cm@ 10 gram
*1). Put ingredients B in a blender and blend until fine)
*(Masukkan bahan B dalam blender dan kisar halus)

***Olive oil/Vegetable oil for glazing - 2 tbsp/
(Minyak Zaitun/Minyak sayur - 2 sdm)

Method
(Cara membuat)
1). Place Chicken(A) in a large bowl and mix ingredients B and C(blended ingredients) with it.
*(Letakkan ayam dalam satu bekas besar dan masukkan bahan B dan bahan C dengan ayam).
2). Mix well and leave the chicken in the refrigerator to marinate for 6 - 8 hours.
*(Gaul rata dan perap ayam selama 6 hingga 8 jam di dalam peti sejuk).
3). Remove the marinated chicken from the refrigerator and let it sit in room temperature for around 30 minutes. Line the roasting pan with aluminum foil for fast and easy clean up.
*(Keluarkan ayam dari peti sejuk dan biarkan berada dalam suhu bilik selama 30 minit. Lapikkan loyang dengan aluminum foil).
4). Preheat oven to 250 °C. When the oven is up to the temperature, roast the whole chicken at 250°C for 15 minutes.
*(Panaskan oven dengan suhu 250°C dan pangang ayam pada suhu 250°C selama 15 minit. Nota:Saya guna oven dengan alat pemanggang bawah dan atas).
5). Then reduce the oven temperature to 200°C and continue to roast the chicken for 20 minutes.
*(Selepas 15 minit, kurangkan suhu oven ke 200°C dan teruskan pangang ayam selama 20 minit).
6). After 20 minutes, remove the chicken from the oven and glaze it with 2 tbsp of olive oil/vegetable oil.
*(Selepas 20 minit, keluarkan ayam dari dalam oven, sadur/glaze dengan 2 sdm minyak zaitun/minyak sayuran.
7). Allow the roasted chicken to rest for at least 20 minutes before serving in order for the moisture from the chicken to distribute evenly and seal itself in.
*(Rehatkan ayam bakar selama 20 minit di luar oven sebelum hidang supaya ayam kekal lembab di dalam).
