Hey there! Here's another easy fried Chicken recipe for you guys. My version of Spiced Fried Chicken that taste amazing. I made this yesterday and it turn out crispy from outside and juicy from inside. This is one of my favorites and I've made this lots of times. If you would like to give this recipe a try, I strongly recommend you to use chicken thighs and drumstick because it stays tender even if you over fried it. This dish goes well with Chilli sambal. Let's get started.
Ingredients A
(Bahan - Bahan A)
1). Chicken Thigh - 4 pieces @1.2 kg /
**(Paha Ayam - 4 ketul @ 1.2kg)
2). Chicken seasoning powder - 1 tbsp /
**(Serbuk perasa ayam - 1 sdm)
3). Salt - to taste /
**(Garam - ikut citarasa)

Ingredients B (Finely blended)
(Bahan - Bahan B - kisar halus)
1). Shallot(s) - 8 pieces, sliced /
**(Bawang Merah - 8 biji, dihirs)
2). Garlic - 8 cloves, sliced /
**(Bawang Putih - 8 ulas, dihiris)
3). Ginger - 2 inches@10 grams, sliced /
**(Halia - 2 inci@10 gram, dihiris)
4). Galangal - 40 grams, sliced /
**(Lengkuas - 40 gram, dihiris)
5). Coriander powder - 1/2 tbsp /
**(Serbuk Ketumbar - 1/2 sdm)
6). Curry leaves - 10 pieces /
**(Daun kari - 10 helai)
7). Meat Curry powder - 1 tbsp /
**(Serbuk kari daging - 1 sdm)
8). Fennel powder - 2 tsp /
**(Serbuk jintan manis - 2 tsp)
Put all ingredients B in a blender and blend until fine.
**(Masukkan bahan B dalam blender dan kisar halus).

Ingredients C
(Bahan - Bahan C)
1). Egg white - 2 pcs, exclude the egg yolk /
(Putih telur - 2 biji, asingkan kuning telur)
2). Potato starch/Tapioca flour - 3 tsp /
(Tepung kentang/Tepung ubi - 3 sdt)
**Put ingredients C in a bowl and mix well.
(Masukkan bahan C dalam sebuah mangkuk dan gaul rata)

Ingredients D
(Bahan - Bahan D)
1). Curry leaves - 2 sprigs /
**(Daun kari - 2 tangkai)
2). Oil for frying - sufficient amount/
**(Minyak untuk mengoreng - secukupnya)
----
Ingredients E
(Bahan - Bahan E)
1). Water - 1 litre /
**(Air - liter)
----
Method 👇👇👇
(Cara membuat 👇👇👇)
1). Combine blended ingredients(B) with ingredients A(Chicken and seasoning). Mix well and keep to marinate in the fridge for at least 6 hours.
**(Satukan bahan kisar(B) dan bahan A(ayam dan perasa). Gaul rata dan perap selama 6 jam dalam peti sejuk).
2). Pour 1 litre of water(E) in a wok then bring to a rolling boil over high heat.
**(Tuangkan 1 liter air(E) dalam kuali dan masak dengan api yang besar hingga mendidih).
3). Once the water is boiling, add in the marinated chicken and simmer over low heat for about 45 minutes.
(Bila air sudah mendidih, masukkan ayam yang telah diperap tadi dan masak dengan api kecil selama 45 minit).
4). When the chicken is done, remove it from the wok, drain it and let it cool down.
(Bila ayam sudah masak sepenuhnya, keluarkan dari kuali, toskan dan biarkan sejuk).
5). Pour the residue of the spices mixture/residue of ingredients B from the wok into a strainer to separate the liquid from it/and strain until semi dry. Then deep fry the spices residue until crisp and set aside.
(Tuangkan sisa campuran rempah/sisa bahan B dari kuali ke dalam penapis dan tapis hingga separa kering dan goreng hingga garing. Ketepikan).
6). Heat enough oil in a wok for deep frying.
(Panaskan minyak secukupnya dalam kuali untuk mengoreng ayam).
7). Glaze the chicken with the egg white mixture (ingredients C). Add the chicken in hot oil until it has turned crispy and golden brown for about 3 minutes is enough since the chicken is already cooked. Add in the curry leaves(D) and continue to fry the chicken with curry leaves for about one minute. Remove and drain on paper towel.
** Salutkan ayam yang telah direbus tadi dengan bahan C(Putih telur). Gorengkan ayam yang sudah direbus tadi sehingga agak keperangan dalam 3 minit kemudian masukkan daun kari(D) dan teruskan mengoreng ayam bersama daun kari selama lebih kurang satu minit. Toskan ayam atas tisu dapur.
