Hi! everyone. This is Nora Liban. Thank you so much for coming by and I really appreciate it. I'm very delighted to share with you my latest recipe called "Galangal Fried Chicken" @ in Malaysia it is called "Ayam Goreng Lengkuas" which I have invented recently  and for sure you'll love it. Well, I've nothing much to say about it and the only thing I want to say is......eerrmmmmmm, it's finger licking fried chicken and y'all will get addicted to the taste. You won't believe until you give it a try. If you're new to this blog, for your info, I've been posting recipes here since 5th November 2020 and today I assure you that I'll be updating my blog from time to time with my new recipes@my own version or a modified version of recipes. Ingredients:
(Bahan - bahan)
Ingredients A
(Bahan-Bahan A)
1). Chicken Leg(drumstick & thigh) - 3pcs@900grams /
(Paha Ayam - 3 keping@900gram)
2). Turmeric powder - 2 tsp /
(Serbuk Kunyit - 2 sdt)
3). Salt - to taste /
(Garam - ikut citarasa)

Ingredients B - finely blended
(Bahan - Bahan B - kisar halus)
1). Galangal - 100 grams, sliced /
(Lengkuas - 100 gram, hiriskan)
2). Fresh Turmeric - 50 grams, sliced /
(Kunyit segar - 50 gram, hiriskan)
3). Ginger - 30 grams, sliced /
(Halia - 30gram, sliced)
4). Lemongrass - 4 stalks(white part only), sliced /
(Serai - 4 batang, bahagian putih sahaja, hiriskan)
5). Garlic - 5 cloves, sliced /
(Bawang putih - 5 ulas, hiriskan /
6). Candlenut - 6 pcs /
(Buah Keras - 6 biji)

Ingredients C
(Bahan-Bahan C)
1). Salt - to taste /
(Garam - ikut citarasa)
2). Chicken stock - 2 cubes /
(Stok ayam - 2 kube)
3). Coconut milk - 200ml /
(Santan - 200ml)
4). Water - 1.5 litres /
(Air - 1.5 liter)
5). Bay leaf - 3 pcs /
(Daun Salam - 3 keping)
6). Coriander powder - 2 tsp /
(Serbuk Ketumbar - 2 sdt)

Ingredients D- mix well
(Bahan - Bahan D - gaul rata)
1). Egg white - 2 pcs, exclude the egg yolk /
(Putih telur - 2 biji, asingkan kuning telur)
2). Potato starch/Tapioca flour - 3 tsp /
(Tepung kentang/Tepung ubi - 3 sdt)
**Put ingredients D in a bowl and mix well.
(Masukkan bahan D dalam sebuah mangkuk dan gaul rata)

Method 👇
(Cara membuat 👇)
1). Rub salt and turmeric powder onto the chicken and set aside for two hours.
(Sapu garam dan serbuk kunyit pada ayam dan perap selama dua jam).

2). Put all ingredients B in a blender and blend until fine.
(Masukkan bahan B dalam blender dan kisar halus).

3). Pour 1.5 litres of water in a pot then add in the blended ingredients(B), salt, chicken cube, coconut milk, bay leaves, coriander powder and bring to boil over high heat.
(Tuangkan 1.5 liter air dalam periuk. Masukkan bahan-bahan B, garam, stok ayam, santan, daun salam, serbuk ketumbar dan masak dengan api yang besar).

4). Once the water is boiling, add in the marinated chicken and simmer over low to medium heat for about 45 minutes.
(Bila air sudah mendidih, masukkan ayam yang telah diperap tadi dan masak dengan api kecil dan sederhana selama 45 minit).

5). When the chicken is done, remove it from the pot, drain it and let it cool down.
(Bila ayam sudah masak sepenuhnya, keluarkan dari periuk, toskan dan biarkan sejuk).

6). Pour the residue of the galangal mixture/residue of ingredients B from the pot into a strainer to separate the liquid from it/and strain it until semi dry. Then deep fry it until crisp and set aside.
(Tuangkan sisa campuran lengkuas/sisa bahan B dari periuk ke dalam penapis dan tapis hingga separa kering dan goreng hingga garing. Ketepikan).

7). Heat enough oil in a wok.
(Panaskan minyak secukupnya dalam kuali).

8). Glaze the chicken with the egg white mixture (ingredients D) and deep fry until golden brown. Remove and drain well on paper towel.
(Salutkan paha ayam yang telah direbus tadi dengan campuran putih telur (bahan D) dan goreng dalam minyak penuh hingga warna keemasan).

9). Serve the fried chicken with the fried galangal (in method no. 6) and Chilli sambal (as per attached link). Click 👉👉👉 chilli sambal recipe
